Eggplant and Potato Pie

Ingredients

eggplant (small) 3 pcs.
potatoes (small) 4 things.
eggs 1 PC.
olive oil 1 tbsp. l.
parmesan (grated) 1 tbsp. l.
salt pepper taste
thyme, rosemary a few twigs
for the test:
flour 1.5 tbsp.
eggs 2 pcs.
butter 100 g
sour cream 2 tbsp. l.
salt pinch

Cooking method

  • Chop cold butter with a knife with flour and salt until crumbs, add eggs one by one and sour cream, you should get a homogeneous dough. Line a baking sheet with baking paper, roll out the dough to size, grease with OM. Cut the peeled potatoes and eggplants into thin slices, place in a bowl with salt, pepper, beat in an egg, stir, mix with thyme or basil. Put the vegetables on the dough with scales slightly overlapping, sprinkle with Parmesan and bake for 30 minutes in the oven at 180 gr.
