Oatmeal Cupcake

Ingredients

oat cookie crumbs 2 glasses
eggs 3 pcs.
granulated sugar 0.5 cups
kefir 400 ml
soda 0.5 tsp
cake fillers - dried fruits, fresh fruits and berries optional
vanillin or vanilla sugar taste

Cooking method

  • This recipe is from the Recycling series. They gave me a half-eaten bag of dried oatmeal cookies at work so that I could think of something ... It smells great, but it's impossible to eat, stone. So the hardest part about this recipe is turning the cookie into crumb. I succeeded with large graters, the rolling pin did not take, and it was not possible to break it for a meat grinder.
  • And then everything is simple: pour soda into kefir, stir it. While the soda is "thinking", beat the eggs with sugar, like a charlotte. I did not put vanillin, because there was enough of my own smell in the cookies, and I took a little less sugar, because it was already so sweet.
  • Then we combine the eggs with kefir, add the baked crumbs, mix and let stand for 15 minutes so that the crumbs swell.
  • For beauty, I added a little raisins and dried cherries; in the original recipe, finely chopped banana was added to the dough.
  • The author of the recipe baked in small muffin tins, I baked 1 large (square shape 19x19 cm), and put about a third of the dough in a small mold (I had to try what happened so as not to embarrass myself in front of my colleagues).
  • So, if you do it "in one piece", then this is a normal cupcake 20-22 cm round or square.
  • It is baked at a temperature of 170-180 degrees, until a dry speck.
  • The cake turned out to be quite tasty, moist. I flew away with tea instantly

I changed it slightly to fit my reality. I am very grateful to the author, the proportions are good, and the result completely satisfied me.
As you can see from the author's recipe, cookies can be not only oatmeal, but shortbread, for example.
Now about the grater. On a coarse grater, dried biscuits are perfectly rubbed into dust, so don't even try to rub them on a shallow grater. This is me for the "young housewives", so please do not throw the "bison" with slippers
I was very happy with this recipe, because something always dries up both at work and at home. I didn't dare to make potatoes from oatmeal, nor did tiramisu. Cupcake - just right.

pygovka
interesting recipe. I adore oasian cookies and also often forget about them, they dries up, so the resuscitation of the yummy comes in handy. Thank you!

pygovka , I will be glad if it comes in handy. For 2 cups of crumbs, you need about 6-7 oat cookies.

an excellent recipe ... but I think that you don't have to worry about rubbing the cookies .. if you just soak it in kefir ... and then add everything else when it turns sour. I in my youth did this from a simple dried biscuit biscuit. only with sour cream. sour cream, of course, should not be market, but shop. and, given that sometimes there is too much soda in oatmeal cookies, you can reduce the amount of soda. thanks for reminding me of this recipe !.

I would still have to suffer. Some pieces that remained large (I did not rub the cookies "to my fingers") did not get soaked after 15 minutes. I had to pull it out. But, of course, you need to look at the degree of dryness of the cookies.
basaj
and if you crumble it on a combine?
Ikra
You can also use the combine

in a food processor I'm afraid for a plastic bowl ... it's better then to knock heavily dried biscuits with a hammer for meat ... although, I just liked the small pieces in the finished pie ...they still softened when baked.

Great idea and on time! Modified the recipe a bit. It worked out well. I added melted Margarine and a little flour, because the cookies were fresh (it just happened that there were a lot of them) and the dough turned out to be thin. Definitely more baking soda. Biscuit soda doesn't do the trick for loosening. I put in a teaspoon of baking soda and a teaspoon of baking powder. At the bottom of the form are peeled coarsely chopped apples and cinnamon. Sprinkled with nuts on top. In general, it turned out well! Thanks to the author!)
