Orange Corn Pie

Ingredients

softened butter 200 g
sugar 200 g
eggs 3 pieces
corn flour 150 g
Wheat flour 120 g
baking powder 2 tsp
zest and juice of orange and lemon 1 pc.
for glaze:
fine crystalline sugar 125 g
lemon juice and orange (preserved) 100 ml
orange marmalade with citrus pieces 2 tbsp. l.

Cooking method

  • Preheat oven to 180 gr.
  • Whisk the butter and sugar into the fluffy light cream. While beating, add eggs one by one, adding with each a spoonful of flour from a measured amount, if the mass begins to curl. Add the remaining pre-sifted wheat and cornmeal along with baking powder. Stir in the orange and lemon zest. Pour 100 ml of mixed lemon and orange juice, add the remainder to the dough.
  • Transfer the dough to a mold (mine is a deep silicone 18 cm diameter). Bake in the center of the oven for 40-45 minutes (it took me 50): the cake rises a lot and turns golden. Check readiness with a splinter (it must be dry).
  • While the pie is baking, in a saucepan, combine the sugar, citrus juice and marmalade (not added). Heat over low heat until the sugar is completely dissolved. Let it simmer and cook until the frosting is syrupy (about 5 minutes).
  • Let the cake cool slightly, carefully remove it from the mold, pin it over the entire surface with a knitting needle, pour the finished glaze (rather slowly so that the glaze has time to be absorbed). Spread pieces of marmalade on top of the cake, let cool completely. Serve with whipped cream or a scoop of ice cream.

Note

Corn flour gives baked goods their characteristic crumbly texture. In this cake it is set off by orange glaze. This cake also has a pleasant citrus aroma and taste. Recipe from the magazine Gourmet pastries number 9
