Bread on a dough for a bread machine (as it was in childhood)

Ingredients
Opara
Wheat flour, premium 140 gr
Peeled rye flour 60 gr
Warm water 200 gr
Yeast Saf-moment 1.5 tsp.
Dough
Wheat flour, premium 400 gr.
Vegetable oil 2 tbsp. l.
Sugar 1 tbsp. l.
Salt 2 tsp
Water 160 ml
Apple cider vinegar 10 ml
Cooking method

Six months of experiments, our forum and my family eaters have led to this delicious bread recipe that looks like a real one.
I mix all the constituent doughs lightly in a bowl, transfer them to a bucket of bread makers and put them on the "quick bread" program (knead 15 minutes, rise 50-60 minutes),
an hour later I turn off this program, I carefully add all the other ingredients (flour, sugar, salt, oil, water with apple cider vinegar) on top of the dough, I have a Panasonic, so I put it in the order I wrote it, and
I put on the timer the main program with a DELAY of 1 HOUR.
If you do not have a Panasonic, then the delay should be set for 30 minutes more (Panasonic evens out before kneading).

The dough can of course be kneaded both by hand and on the dumplings or pizza program and let it stand for an hour in a warm place, and then everything is according to the recipe, just on the quick bread program, the dough will be heated and the temperature in the HP will be kept at the optimum
The bread is very tasty, beautiful crumb, smooth, finely porous, when the bun cools down, you can squeeze it and it will not crumble right away and even after 2 days it is still soft and tasty!

We bought ourselves a Panas 2502 the other day. We wanted Mulinex programmable ow251e32, but after reading the forum, doubts appeared and the choice fell on 2502, all the more we bought a new one for 6tr (it was in a box of 3 years for people, and was not included). Have already tried 5 different recipes. Unlike the simpler recipes without dough, I liked this one because the crust remains crispy for 7 hours for sure (until you have eaten it all and how much it will still be crispy is unknown). According to the recipe "Panasonic 2502. Ordinary white bread" the crust after 4 hours was already soft. But he got up better. And it was more porous. After him, "Panasonic 2502 Darnitsky bread" was surprisingly low
The top turned out to be not very even, visually the bun was like nothing (there was nothing left on the walls), but we are not specialists

Visually it is better, but we love the crisp and this recipe from this theme liked it better.
Tell me why the top turned out so clumsy? What to add?
p.s. Should you add homemade dough panifarin to any recipe?

I didn't quite understand one point: when we add the remaining flour and the rest of the ingredients to the dough, do you need to mix anything? An hour comes up and then another hour and a half stands with flour on top? I'm afraid that I might stand or worry in vain?

I took a chance and made this bread. True, the dough was defrosted for the first hour not in a bread maker, but simply in a bowl at room temperature. An hour later I put all the ingredients in a bucket and forgot about the bread for five hours))) everything turned out great. Tall bread, for all the bucket, with a convex roof, even a little the roof blew up! I took a little less yeast, a spoon and a quarter, and I didn’t add about 30 ml of water (lately, sometimes it turns out a flat roof, I made sure)
