Cooking method

  • Preheat the oven to 180 degrees Celsius.
  • Prepare the form (according to the recipe, the form is rectangular 20 by 9 cm).
  • Combine flour, soda, baking powder, cinnamon (I also added half an teaspoon of salt) and sift.
  • Beat butter with sugar. Add the yolks one at a time while whisking.
  • Introduce beets. Then add lemon juice, raisins, seeds.
  • Then add flour.
  • Beat the whites in a separate bowl, carefully combine with the dough.
  • Place the dough in a mold, bake for 50-55 minutes, check for readiness with a splinter. Cool in the form for 20 minutes, then cool completely on the wire rack.
  • For the glaze, mix the icing sugar with lemon juice (you need about 3 tsp). Pour icing on the cupcake. [/ I]

Note

The recipe from here: 🔗

I didn’t do the icing (and it’s for the best), because mine and without icing recognized the cake too sweet, but this is certainly not for everybody. And also, in the opinion of my eaters, the vegetable oil "appears too much" (next time I will try to replace it with butter or margarine). Everything else was according to the recipe, only I took regular flour (instead of self-ascending) and added an additional 1 tsp. baking powder. She baked in the "Baking" mode for 65 minutes. 10 minutes after baking she held the cake under a closed lid and for another 15-20 minutes with an open
lid, then tipped the cake on the wire rack and left to cool completely.
In general, a delicious, juicy and fluffy cupcake without any hint of beets, until the last moment she did not tell her about what the cupcake was, without my prompting, no one guessed that beets were in the cake.

why add soda, and even a baking powder if all this is already in the flour?

I do not use self-rising flour (I bake all muffins from regular premium flour with the addition of soda / baking powder), so I find it difficult to answer your question, especially since I am not the author of the cake ...
