Ingredients

Dough:
Wheat flour 500 g
Milk 250 ml
Salt pinch
Brown sugar 3 tbsp. l.
Butter 100 g
Fresh yeast
(or 1 and 3/4 dry)
20 g
Egg 1 PC.
Vanilla sugar
(in the original 0.5 tsp ground anise,

Filling:
Softened butter 50 g
Sugar (preferably brown) 0.5 tbsp.
Ground cinnamon
(I don't like it, so I didn't put it)
1 tsp
Walnuts 50 g
Dried cranberries or cherries
(original - dates)

Dark raisins 50 g
Cognac or dark rum 2 tbsp. l.

Cooking method

  • The original dough is made by hand. But laziness, dear comrades! Therefore, all products for the test are simply dumped into the HP and put on the main test mode for your HP. As soon as the dough is set to be made, immediately fill the dried fruits with cognac or dark rum. Let them swell.
  • After the dough is ready, roll it into a 1cm thick layer. Since it will need to be rolled into a roll and put into a shape in a ring, roughly correlate the diameter of the shape and the length of your roll so that it does not turn out very short or very long. It is not necessary to dust the table with flour, there is a lot of oil in the dough, so it does not stick. The edge from which you start rolling the roll should be thicker than the opposite one (roll it thinner). This is a general rule for working with yeast dough rolls. This technique allows you to make the roll more accurate and beautiful.
  • Grease the rolled dough with melted butter, sprinkle with nuts (I did not chop them very finely) and dried fruits. Sprinkle everything with sugar. Now from two opposite sides, fold the dough by about 2 cm (these will be the edges. We fold it so that nothing falls out of there when folding). The dough is plastic and excellent at work. Now we roll up the roll. After that, put it in a mold with a hole in the middle, greased with vegetable oil, seam down. Make pricks with a toothpick, do not lubricate.
  • It falls out of the form perfectly, just let it cool down a little. The recipe didn't say anything about proofing, but I still let him proof for 15-20 minutes. Place the roll in a mold, cover with a towel and only now turn on the oven. So it will stand a little while it heats up.

Not a roll, but not a cake either. Moderately sweet and aromatic pastry. Dates with sugar seemed too sweet to me, so I replaced dates with sweet and sour dried cranberries.
