I carefully read Topic 7. FORMATION OF A TEST PAPER - "KOLOBKA" from Admin.
Is the time indicated in the cycles standard for all bread makers? Panasonic-2502 in program 01 works either in the MODE MODE, then LIFT cyclically, that is, during lifting it goes into batch, then from batch to lift. Is there any harmonious system in this ??? Has anyone done timing ??? :) When do you need to add flour to form a bun?

No, the time is not standard for all x / stoves! I filmed time in Hitachi's x / stove.

But the principle, the scheme of the program in phases is practically the same. I wrote in detail about the meaning of cycles, phases here
HOME-BAKED BREAD MANUAL # 2
when you understand this, it will be easier to navigate.

Flour must be added in time in 1 cycle (kneading), since then there is a thorough kneading and the development of gluten, this is a very important moment for high-quality dough and bread.

Based on my scheme, you can make your own, for Panasonic, for which you need to stand at the x / stove and make the timing during the entire kneading and baking time.

Forgive me for the meticulousness, but during the kneading-THIS HOW- during the preliminary kneading (at the beginning) or later, during the main batch, in 5-10 minutes or later ???

It is advisable to adjust the dough during the FIRST, PRE-kneading. Then there is a PAUSE, that is, the dough is given time to swell with flour, combine with the liquid, so that the yeast starts to work partly - the dough RELEASES - THIS IS NOT A KIND!
But then the SECOND, MAIN KNEAD begins! At this time, the real kneading of the dough begins, the formation of gluten, the development of gluten threads, this is a very important stage for high-quality dough and bread.
Flour or water can only be added at the very beginning of the main batch! The dough needs to ripen, develop gluten, and if flour and water are constantly added to the dough, then the dough will turn out to be a mess, and the dough will turn out to be of poor quality.

I described all this in detail in my MANUAL, and those two sections, the links to which I gave you above.

The first time does not reach. I wrote down and learned

I don't know where to write my question. We decided to buy Panasonic, but I have such a situation: I do not use baker's yeast, but I make a sourdough from hops. Is it possible to do this, separately, to put the dough by itself, and then pour it into the bread maker? Ie.as if without mixing? I tried to do this in a multicooker kukko1054, but the bread turned out raw inside. So we decided to buy Panasonic. I would be grateful for the answer

Here I am also interested in the timing of the batch-rise-notice-rise. So that you have time to remove the spatula before baking. I don’t want to leave it in bread. Who takes out the scapula when on program 01 main
