Ingredients

flour 400 g
fresh yeast (mine is dry) 20 g (1.5 tsp)
sugar 50 g
egg 1 PC
cognac 30 ml
draining. oil 50 gr.
honey 50 g
milk 100ml (I have 130 ml)
salt 0.5 tsp
vanilla sugar 1 tsp
For finishing:
egg + milk 1 pc + 1 tbsp. l.
hazelnuts 16 pcs.
brown sugar (I have a simple one)

Cooking method

  • In the original recipe, these buns were called "Chocolate Nut Buns".
  • But I have a different filling ... And, cutting the dough, I wondered how to call them? ", - walnut" Krakatuk "?
  • Filling:
  • The original recipe uses chocolate-nut hazelnut paste.
  • 100g chocolate
  • 50g chopped hazelnuts
  • 1 tbsp. l. honey
  • 1 tbsp. l. a spoonful of brandy
  • Fry nuts in a dry frying pan, peel, cool and chop. Break the chocolate into pieces, add chopped nuts and brandy, heat the mixture a little over a fire or in the microwave. When the chocolate begins to melt, stir the mixture well with a spoon until smooth.
  • I had apple-nut filling:
  • On a coarse grater I grated one and a half Semirinko apples (I took out, washed, wiped two apples out of the refrigerator ... By the time of preparation, there were one and a half on the table ... Miracles !!!), squeezed the juice (and drank it !!!) and mixed with the finished nut filling, which contains chopped hazelnuts, sugar and starch.

  • Alla used coconut stuffing:
  • 100 g coconut flakes
  • 70 gr. Sahara
  • 30 g soft butter
  • 30 gr eggs
  • Dough.
  • Butter, honey, milk, cognac - mix the indicated ingredients, heat the mixture but do not boil, the butter should melt.
  • Mix flour and salt, add sugar, vanillin, yeast. Pour in warm milk-honey mixture. Knead a soft elastic dough.
  • Egg as usual ... You can mix and shake with liquid ingredients, you can just break it into a bucket of a bread machine.
  • I kneaded the dough in a bread maker on the Pelmeni program.
  • Put the finished dough in a greased container and ferment in a warm place until doubled. (I used it in a multicooker Brand502 on the Dough program).
  • Divide the finished dough into two parts, roll out into round cakes 6-7 mm thick. Divide each circle into 8 triangles, lay out the filling, form rolls like bagels.

  • There was not enough filling for the last bun, so I put a piece of banana in the filling. When connecting the tails, the banana rested, but I turned out to be stronger !!!

  • Proofing the formed rolls under the foil until doubled.

  • Brush with egg + milk, sprinkle with sugar.
  • Bake at 180C until golden brown for 25-30 minutes.

Gasha, I made an apple-cinnamon one, added a little lemon zest to the filling plus a sweet cherry in each bun (I remembered a strudel in such a fancy filling), it turned out very tasty, though without cinnamon it would have been more tender.There were no strawberries - they all went into the curd casserole. In principle, the cherries behaved impeccably - the shape remained and the juice did not flow out.
