Morel mushrooms in creamy wine sauce

Ingredients

Morels / morel cap, boiled 600-700 g
Bulb onions 2 pcs
Wine Jerez ~ 0.5 cups
Decoction of dried white mushrooms ~ 0.5 cups
butter 1 tbsp. the spoon
soy sauce 3 tbsp. spoons
fat cream 200 g
corn starch 2 tsp
salt, freshly ground pepper

Cooking method

  • The recipe was born yesterday. Endless gratitude to Natalia (Chuchelka) for discovering Jerez for me. And the broth from porcini mushrooms, of course, is not in my stash, I just cooked mushroom soup with leeks yesterday.
  • Peel the mushrooms, boil twice for 5-10 minutes, rinse well with cold running water. Rinse, lightly salt. Fry the prepared mushrooms with the lid closed in a saucepan in vegetable oil for 10-15 minutes. In the middle of frying, add 2 tbsp. spoons of sherry. Transfer the mushrooms from the saucepan to a plate. Add 1 tbsp to the saucepan. a spoonful of butter, put onion cut into half rings (2 rather large heads), fry until the onion is transparent, pour in a spoonful of sherry, after a minute add 100-150 ml of decoction from dried porcini mushrooms, stew for a couple of minutes. Return the mushrooms to the stewpan, stir, let everything simmer over low heat under the lid. In a separate cup, mix 2 teaspoons of cornstarch with 3 tablespoons of soy sauce. Pour the diluted starch over the mushrooms and onions, stir, simmer until the sauce thickens. Then add 200g 33% cream, simmer for a couple of minutes.
  • It turned out very tasty.

We did not see it, because morels grow in spring, and there are enough of them in the forests of Nizhny Novgorod.
I think that with dried morels you can do everything that can be done with all dried mushrooms: mushroom soup, you can like a filling in a pie. It's simple. Soak mushrooms, boil for 20 minutes, pour the broth, rinse the mushrooms. Fry a lot of onions, add mushrooms and fry a little more. Boil some rice, mix with mushrooms - that's the filling for the pies. You can mix with fried cabbage, mashed potatoes and stuff as you like with pies and pancakes. And you can make such a sauce. But I would not dare to use broth from morels, mushrooms are still conditionally edible. Therefore, I boil them twice in different waters and then rinse them very well.
