The first bread I baked in a brand new bread maker was, as advised in the instructions, according to the basic recipe. By the way, the basic recipe says: water - 210 ml, milk - 115 ml. It turned out right away and there were never any failures. I bake more often in the delayed mode, I like to wake up in the morning with the smell of fresh bread! Very tasty bread, but I began to notice that as it hardens (for 3-4 days), the crumb begins to crumble slightly. Oh, I don’t like this in bread! In addition, I regularly bake Shumava wheat-rye bread on buttermilk (by the way, it does not crumble at all), and my mother loves pure wheat bread. I started looking for another recipe for white bread, tried a lot of things, but nothing stuck. Once I had too much buttermilk, I felt sorry that it would turn sour and I thought of trying to bake white bread on buttermilk instead of water-milk. The results exceeded all my expectations! The result was the kind of bread I was looking for - airy, moderately elastic, porous, slightly layered (almost like a cake) and practically not crumbling - almost like a grandmother from a Russian oven! This morning I baked a bun of this bread (in the main photo) and found a piece from the previous baking, tore it up so that the crumb structure was visible:

Irish, I bake different ones all the time, sometimes I return to my old favorites. I started to bake French baguettes in the oven according to 2 options, I tried Munich bread, the other day I baked Pain Brie - Norwegian bread. It's so nice to take bread out of the oven! Observe the process from the beginning. After preliminary kneading, after 5-7 minutes the HP stops for 10 minutes, touch the dough and decide whether the bun is elastic enough. Usually by this time it is already clear whether the ratio of liquid-flour is correct. If correct, there is already a bun, if there is a lot of liquid, there are circles of batter under the dough, if there is not enough liquid, all the flour will not knead, there will be dry pieces of dough in a bucket. At the expense of the baking mode, you should, first of all, study the instructions for the HP and do not be afraid to use the attached recipes, even if not everything works out, you will correct it a second time.
If the kneading is done immediately after laying the products, then all the ingredients, including salt and yeast, are added at the same time. Separate them for delayed baking.

Olga, take a book with recipes for HP and bake everything until you find the bread that your family will especially like. For example, my mother and daughter like white bread more (they eat it with everything), and my husband and I like wheat-rye bread. So I bake both.
If you want the white to look more like a loaf, make it in milk, instead of vegetable, put about the same piece of butter. You can add an egg by reducing milk by its volume. Do not be afraid to experiment, try the recipes from the site!
For baking rye breads, I have the Borodino bread program in Mulinex, if your model does not have it, bake on the main one, it will still work out. Good luck!

Tip: do not bake bread on a fast program, it will always be so underbaked. Go to basic, basic normal prog and baked goods.
