Gray bread on light beer in a bread maker

Ingredients

Dough:
dry yeast 1.2 tsp
wheat flour 200 g
honey 2 tbsp. l
light beer, filtered 150 ml
Dough:
dough
wheat flour 200 g
salt 1.2 tsp
light beer, filtered 130 ml
wheat bran 50 g
vegetable oil 2 tbsp. l

Cooking method

  • It is better to take beer for bread live (draft), light filtered.
  • I took the usual bran, those that are sold in the diet food department.
  • Dough:
  • Mix yeast, flour, honey and beer and leave to rise for 1 hour. You can do this in a bread maker, in any mode convenient for you. The main thing is to start the batch immediately.
  • Dough:
  • While the dough ferments, fill the bran with the remaining beer and let them stand for a while.
  • Add the remaining necessary ingredients to the dough. Mode - basic, size - medium.
  • When kneading, the gingerbread man turns out to be soft, slightly sticky (due to the bran), it does not smear along the bottom of the bucket.
  • Put the finished bread on a wire rack and let cool.

Yeah, mine still can't survive. He thought that I added rye flour, it tastes very similar, but here - beer!

Help yourself, girls and boys!

If there is grain, you can grind it in a coffee grinder or order it only for you, probably it will be a little expensive? If there is rye flour, take it instead of bran. The main thing is to have beer
Sonadora
Albina, if the store has a dietary food department or products for diabetics - look there. Alternatively, try replacing the bran with oatmeal (instant) or do it without them, only you will need to take less liquid (beer).

AXIOMA, I don't even know why I have some "tailed" photos. I always copy the link from the radical completely and in the same way.

I watched the bran for a long time: firstly, whether mine will be with the bran. They rarely bought bran bread from the store, they did not eat it quickly. Second, dear ones will BRAN like golden eggs
Beer for this business is just light
Albina
And my oatmeal "heaps" Thank you, Sonadora
Sonadora
Albina, her bran is not at all expensive, a 200-gram bag cost 24 rubles!

Mine thought they didn't eat chicken breasts and spinach, and so much more!
It appears so, bake from what is! Beer, approximately 230 ml.

Transport delivery is expensive. the product is worth a penny

The store may not be. And I think they will hardly refuse their own - a completely different taste

And the beer is dark, so that without bran, and the color fits
LyuLyoka
Albina, if you still find bran, but doubt whether they will eat, reduce the dosage to 20-30 grams for a start, take more flour accordingly

I rarely go to the pharmacy, so I don't know. Once I went to ask about yogurt starter cultures, so no one knows what (or they scatter in their own way ...

Girls and what is better to add wheat or rye bran?

The Recipe Author's recipe says: wheat bran 50 g
Zhannochka
Sorry, overlooked.
Zhannochka
Marina, thanks for your recipe, very tasty bread turned out, though its roof was torn a little and it seems to me that it turned out to be denser than in your photo. The only thing I changed was butter, I took butter in the same proportion. HP I have the same Panas 255. And so, thanks again for the recipe.
Sonadora
Zhannochka, to your health! I am very glad that I liked the bread.

Oil change has nothing to do with it. Most likely, the bun turned out to be denser (perhaps the bran absorbed more liquid than mine). Therefore, during baking, the roof suffered.

PS If possible, to me on "you".
Zhannochka
Marin, well, in general, when I filled the bran with beer, not a single gram of beer was visible, maybe next time I could reduce the bran by half?
Sonadora
Zhannochka, or increase the amount of beer by 20-30 ml and look behind the bun during the batch. It should turn out to be quite soft, a little sticky, like a bun containing whole grain flour.

To be honest, in the 2.5 years that I have HP, I started looking after the kolobok before Easter when I tried different Easter cakes and climbed onto the Bread Maker, before that I thought that it could not be opened until it had finished its work. I almost always bake at night, on the timer.

Zhannochka, I have been baking in KhP for 17 years and in most cases with a delay time: I also put it in the night When the bread does not work out, you can count on the fingers (mmm) I learned: I make sure that the bucket is completely installed; so that the door to the balcony is closed. And what if the yeast is less effective. I immediately react.

Very tasty bread thanks,Gray bread on light beer in a bread maker

Sonadora,
I have been looking at your bread for a long time and in the near future I will try to implement it, but for now the question is, unfiltered live beer, you need to take a draft or bottled one, too, will come up from the category of "live", I know that Lvovsky has this
Sonadora
Zhannochka, great bread, fluffy! And how many holes!

rusja, if there are no preservatives, then it will do.

Manka, swept, then another question on the way, I have not bought the bran yet, but I found some kind of bran in Auchan - vegetable fiber for nutritional diets, it will not work as a substitute for bran? It's just that the experience of baking is very small, although I have been mastering the Khlebopechkinsky site for two whole years with kapeikas
Sonadora
Ol, I don't even know. Bran is the shell of the grain, but what is fiber? How much water will it take?
rusja
In general, let's see, I'll fill it with beer instead of bran, and I'll use it, and there, as God willing
Elena K
Hello, I really liked your bread, Can I have a few questions, I want to take a dark "live" beer, is it suitable? I don’t know what kind of bran they brought from the village and do they need to be roasted before use?
Sonadora
Elena, with darker beers the malt flavor in the finished bread will be brighter. If this does not bother you, then of course you can bake on it.

Here Admin wrote that:
"... Before putting the bran in the bread dough, they can be fried briefly in a hot pan until the color changes (darkening) ..."
Elena K
Thanks tomorrow I will bake
Sonadora
Elena, good bread.

Here is my first report. My husband confused everything and bought a light, non-filtering wheat beer, I hope it will not be tasty, fried the bran, added a handful of fried seeds and dry garlic.Gray bread on light beer in a bread maker Here is a photo of the first batch. I wanted to ask you ever added unrefined vegetable oil "homemade" to baked goods, what happened?
Elena K
During the second batch, the bun began to stick strongly to the walls. added 2 s. l flour and risked 0.5 s. l of unrefined oil. Here is a photo before proofing.Gray bread on light beer in a bread maker

I'm afraid that the smell of "homemade" butter is too strong, I like to add it to salads and boiled potatoes with butter is super: nyam: but bread
Creamy
I also don't use unrefined sunflower seeds in baking, I only talked about expensive varieties of unrefined linseed and mustard oils.

And where do you buy them, if not a secret?

These oils can be bought in supermarkets, where there is a large display of a huge assortment of different oils, there you can see corn germ oil, grape seed oil, pumpkin seed oil, sesame oil and the previously voiced flaxseed and mustard oil. By the way, flaxseed oil is domestic production in the city of Tver, mustard oil is also domestic production "Ogorodnikov" produced in the city of Volgograd. These oils can be bought in pharmacies or specialized health departments. Having tried to bake in these oils, you will also become a fan of them, and breads baked in other oils will seem somehow dull and tasteless to you. But I didn't like pumpkin seed oil at all, after eating such bread, my stomach and intestines ached. I use grape seed oil only as a cosmetic mask. I have not used corn germ oil yet.

Well, yes, I know about oils in stores, thanks: flowers: But something confuses me with their quality, this is still production, probably half of the nutrients are lost in these oils or preservatives are added, it’s just people have to take oil: nyam :But thanks anyway.
