Flour 300gr (450gr)
Sugar 1 tsp (2 tsp)
Salt 1 tsp (1 3/4 tsp)
Yeast 1 1 / 2h. l (2 tsp)

  • Whisk the egg whites until stiff. Place all the ingredients in a baking dish in the order shown in the table, adding the egg whites to the water.
  • Set the crust color to "medium" or "dark".

Note

This dough can be made into a traditional French baguette in the oven. Prepare the dough in the bread maker by setting the Dough program.

Carefully remove the dough from the HP bucket, put it on a lightly floured table - let it rest for 5-10 minutes.
Roll out the dough into a long, thin loaf in the traditional way or in the usual spiraling manner. Lay on baking paper, use a razor or scalpel to make several shallow cuts. Leave to proof for 30-40 minutes.

Bake in the oven on a hot baking sheet first with steam for 10 minutes at 250C, then remove the steam and reduce the temperature to 230C and bake until golden brown, about 20 minutes.

Baguettes stale very quickly if not eaten on the same day. Give them another chance - freeze them and then reheat them in the oven and they will be as fresh!
