Cabbage crumpets

Ingredients

Fresh cabbage 400g.
Milk 50g.
Vegetable oil 50g.
Fresh yeast 15g.
Wheat flour 500-550g.
Sour cream (mayonnaise) 20g.
Sugar 100g.
Salt 1.5h l.
For lubrication:
Yogurt 2-3 st. l.

Cooking method

  • Grate cabbage on a fine grater or chop with a combine. Simmer with milk, butter and salt until tender. I did the Quenching mode in MV for 30 minutes. Cool down. At the "exit" I got 415g in weight.
  • Grind yeast with 10g. sugar from the total and leave for 10 minutes.
  • Put cabbage, yeast, sour cream, flour on top, the remaining sugar in a bucket of HP. You may need a little more or less flour until a smooth elastic dough.
  • After kneading, leave the dough in the HP for 10 minutes, then turn off the HP, take out the dough, form a ball, put it in a container. Greased with oil and leave in a warm place for 1 hour. I put the dough in MV Brand mode.
  • After a while, knead the dough, divide into 12 pieces, cover with a towel and leave for 15 minutes.
  • Form a bun from each piece of dough and place in a mold at a distance from each other. I have a form measuring 28cmx21cm. Cover with a towel and leave for 45 minutes. I leave in the oven, with the light on and a mug of boiling water.
  • Grease the crumpets with yogurt before baking.
  • Bake in an oven preheated to 200C (convection 180C) until golden brown. The exact time depends on
  • Your oven, it took me 30 minutes.
  • Cool on a wire rack.

I read on some other site (when I was a completely newbie I was looking for in-fu like baking bread, but I had not yet wandered here), one woman threw everything half-eaten into the dough and threw leaven - cereals, expired yoghurts, kefir, sour cream, mashed potatoes, etc. and then she got such buns, mmm ... And the secret is that mine were brought up on homemade pies, where potatoes and cabbage are in NOT sweet dough. And here the dough is very sweet (for my taste). I worked on the mistakes, ate them as cute, but there will be no pictures while the battery was charging ... the enemy of buns does not sleep

Report: firstly, sauerkraut stale (well, by accident). So, I measured out 400 grams and stewed it in sunflower oil in a slow cooker. Whipped up a bit. Sugar added 60 grams, that is, unsweetened so that there are buns. The bread maker was kneading the dough, at first it was dry, I added a bit of sourdough, and in the end I had to add another 2-3 tablespoons of flour. In general, there were some adventures. But the result exceeded all expectations - the buns "flew away" immediately.
