Sprat or capelin dry spiced

Ingredients

sprat or capelin 500 g
coarse salt 2 tbsp. l.
black peppercorns 1/2 tsp
allspice 3-4 peas
carnation 3 buds
coriander seeds 1/4 tsp
Bay leaf 2 pcs.
ginger powder pinch

Cooking method

  • Defrost fish, then rinse with cold water and let the water drain well.
  • Grind the spices well in a mortar, but not very finely. Mix spices with salt, bay leaf can be broken. Sprinkle the salted mixture on the fish, mix gently from bottom to top.
  • For salting, you need wide dishes - a bowl, a saucepan, but not a jar.
  • Cover the fish in a bowl with a plate, put a light oppression and send it to the refrigerator for at least 2 days.
  • The fish turns out to be spicy, lightly salted in taste.

Once I bought an ice cream capelin in Metro - to pamper a cat. It seems that in such a fish, frozen in accordance with all sanitary and hygienic rules, no infection survives. However, the cat still suffered - after a while live white worms appeared in the feces. The reason is only in that ill-fated capelin, since at that time the cat was sitting at home and ate exclusively canned food and dry food. The cat had to be intensively treated. I barely cured it, so now I only subject such frozen fish from the store to a long high-temperature heat treatment. The rule is mandatory for both the cat and me!
