Ingredients

dough:
2 eggs
1 cup of sugar
2 bags of vanilla sugar
200 grams of cream, 30% fat,
1.75 cups flour
1 bag of baking powder
Cream:
200 grams of sour cream (at least 20% fat)
200 grams of cream (minimum 30% fat)
3/4 cup sugar
1-3 bags of vanilla sugar
Filling:
200 grams frozen / fresh berries (raspberries, strawberries ...)
5-6 candies
For decoration:
~ 20 halves of "Raffaello" sweets
1 pack of coconut flakes

Cooking method

  • 2 eggs, 1 glass of sugar, 2 packets of vanillin - beat until frothy.
  • Add 200 grams of 30% cream and continue whisking.
  • Add 2 cups flour, 1 bag of baking powder, and stir until smooth.
  • Put the dough in a baking dish (grease the baking dish or line it with baking paper) and bake in a preheated oven at 160-170 degrees until golden brown for ~ 25 minutes.
  • Cut the cooled cake into two identical cakes.
  • Prepare the cream:
  • Sour cream, cream, sugar and vanillin - beat until fluffy.
  • Now we start to "collect" the cake:
  • Apply cream on the first cake, ~ 1 cm thick.
  • Put the berries (if frozen, then do not defrost), slightly pressing into the cream.
  • Apply a thin layer of cream over the berries.
  • Grind 5-6 candies in a blender (chilled candies are much more convenient to grind) and sprinkle over the cream.
  • Cover with a second cake layer.
  • Grease the top and sides of the cake with the remaining cream.
  • Put the halves of the "Raffaello" sweets around the edge of the cake
  • Finally, sprinkle coconut on all sides of the cake.
  • My comments: Glass - 250 ml. Baked in a cartoon on a rug from the Firebird for 60 minutes.
  • 1 packet of vanilla sugar was poured into the cream. I didn't grind the sweets for the layer ... Zhaaalkoooo .... But I sprinkled the berries with coconut. The cream did one and a half norms. And just as much as was needed was enough ... If anyone decorates, double it.
  • The biscuit from the multi got out huge, so I had to cut it into three parts ... it could have been into four. but the cream would not be enough. I cut large berries in half lengthwise, small ones - pressed them into the cream just like that. Soaked in pineapple compote from a jar. There will be no cut. Cake goes to visit ...
  • I had two scrapers going to the refrigerator ... one smooth, the other with teeth ... For the cakes - the very thing ... try it !!!

The cake is delicious and delicate !! Over the past 3 days, I baked it 2 times, to eat for myself and for a gift. I did everything according to the recipe, baked in the oven, but I did not divide the dough into equal parts, so one cake is higher than the other. Yes, and the bottom cake is a little too dry ... Next time I'll take it into account. And my cream came out thin (cream 35%, sour cream 20%) Probably need more fat sour cream. A piece in the cut in the photo I immediately cut off the fresh one and ate it, not even letting it stand .. The raspberry in the cake is just destined to be! delicious))

Thanks for the recipe! I just didn't do it with coconut, but just smeared it with cream. Soaked the cakes with strawberry jam and rum, and layered them with cream. The combination of cream with strawberries is also very gentle. There were guests and everyone was delighted with the taste of the cake.
