Dry soybeans 2 st
Sugar 250 g
Eggs 10 pieces
White crackers
(savory crackers or breadcrumbs) 1 st
Baking powder 1. tsp.
CREAM:
Cream (33-38%) 300 ml
Mascarpone (cream cheese) 300 g
Powdered sugar (to taste) 70-150 gr
Orange jam 300 g
Vanilla
Cognac, rum, orange liqueur
FOR DECORATION:
Tangerines
Chocolate shavings

Cooking method

  • I have in my favorite recipes cakes with little or no flour.
  • This is the first of these desserts.
  • Based on a recipe from the Grocery School - "White Bean Cake"
  • Instead of beans, I used soybeans, you can also take okara - crushed soy, from which soy milk was squeezed; there will be no differences in consistency, except that there is less protein, which partially passed into milk.
  • I never did it from beans, because I imagined chopped beans as something similar to mashed potatoes. And it is difficult to digest soybeans, after crushing it looks like chopped steamed almonds, since it does not boil in mashed potatoes, but remains strong.
  • And to contrast the taste, there is an interlayer between the cakes - orange jam: aromatic, not cloying, with a slight bitterness ... mmm ...

  • Soy soy in cold water overnight. In the morning, drain the water, rinse the soybeans, add water again, put on fire and cook until tender. Cool, grind in a kitchen processor or meat grinder. Grind the white crackers into flour, add to the soybean mass.

  • Separate the egg whites from the yolks; put the proteins in the refrigerator. Grind the yolks with sugar until white. Add yolks to a bowl of soy and mix thoroughly.

  • Beat the cooled egg whites into a thick foam. Carefully, in small portions, add the whipped proteins to the soy dough. Stir with light movements.

  • Preheat the oven to 180 ° C. Grease a baking dish with butter and sprinkle with breadcrumbs. Pour the dough into it, put in the oven and bake for 40 minutes.

  • For the cream: separately beat the cream (until soft peaks) and the mascarpone, then gently and little by little whisk the cream into the mascarpone while continuing to beat.
  • Finally, add the icing sugar to taste.

  • Cool the finished biscuit in a mold, remove and cut into 2 layers. Smear the bottom layer with orange jam (I have "Schwartau" with zest shavings - mmm), fold the layers on top of each other, and smear the top and sides of the cake with cream.
  • Decorate with cream roses and tangerine slices.
  • Put the cake in the cold - infuse-soak for at least six hours, or even better - overnight.
  • And then - invite guests and enjoy: the taste and surprised exclamations "Really from soybeans? !! ​​Without flour ??? Oh-oh-oh-oh ..."

Very tasty unusual cake! Not dense, not dry. Poured the bottom cake with syrup and slightly greased with jam.
About technology. I took 2 glasses of okara, only 350 grams. She poured two glasses of water, cooked for an hour, squeezed it out. Added an incomplete glass of ground crackers. Eggs 6. Sugar 150 gr.
My shape is 26 cm. There is simply no other, otherwise it could be cut into 3 cakes.
Cream: 270 g cream, 250 g ricotta (pack) and 70 g powder.
The taste is perfect for me. Sweets in moderation, loose cakes.
I haven't told my husband yet what. But he liked it! And this is the main thing
