Homemade glazed cheeses

Ingredients

crumbly curd 220g.
butter 50g.
powdered sugar 30g.
vanilla sugar 1 tsp
chocolate 1 tile

Cooking method

  • Rub the cottage cheese through a sieve, add softened butter (let it sit at room temperature), powdered sugar and vanilla sugar. Grind well until smooth.
  • Break the chocolate and melt in the microwave or water bath.
  • Apply chocolate to silicone molds with a brush and place in the freezer for 5 minutes.
  • Put the curd mass into the molds with frozen chocolate and pour the remaining liquid chocolate on top.
  • Place in the freezer for 20 minutes.
  • Remove from the freezer and remove the molds. They come off easily, I just turned them inside out.
  • Ready-made curds can be put either in the refrigerator or in the freezer.
  • Bon Appetit!

Note

From this amount of ingredients, I got three glazed curds.
Homemade glazed cheeses

Those who like glazed curd cakes with fillings (boiled condensed milk, jam, berries) can be added when filling the molds. Put a third of the curd mass, then the filler and on top again the curd mass.

Thanks for the recipe!

Elena Bo just working on these cheese curds, finishing the recipe, so to speak ... (I even thought to exhibit, but you got ahead) the only difficulty is the glaze itself ... I don't have pasoches ... I made my own rolls, I need to achieve uniform application and not a very thick layer, maybe there is some kind of secret? Could you tell?
Best regards Ekaterina

Try freezing curds in the freezer, placing them on a wire rack, and pouring over with liquid chocolate or icing. If the chocolate is too thick, you can add a lump of butter and stir well.

Great recipe! The kids will especially love it! I'll try to do it!

Thank you, I will try !!!

Rub cottage cheese through a sieve, add softened butter
Elena Bo
and with a BLENDER, can cheese be ground until smooth or into an edge, skip through a meat grinder?
The recipe is MIRACLE !!!!
Elena Bo
A blender will work very well. I do not advise you to bother with a meat grinder - only to get dirty.

Wow, what a great recipe, I will definitely do it, very good. I love cottage cheese and even in this combination. Thanks for the recipe.

And I already did. Yummy is still the same! Real jam. I don't know how to work with melted chocolate. I melted it first in the microwave, then in the bath, it was thickish, added a little milk, it was still very poorly smeared. The freezer was clogged, so the molds were deformed a little. All the same, the family is happy too. Elena, what is your chocolate weight?
Thank you very much for the recipe Here are my treats
Homemade glazed cheeses
Elena Bo
I took a standard tile of Babaevsky Bitter.
They are really delicious, these curds
nimart
Elena Bo, thanks for the wonderful recipe, and for the glazing method

but tell me, is it possible to make white glaze for them, and if so, how?
Elena Bo
If you buy a good white chocolate that melts. Bad white chocolate often rolls up.
nimart
Can you make white icing only from white chocolate?
Elena Bo
I don't know of any kind of glaze that can be applied to setting molds, other than chocolate.
nimart
clear thanks
AlenaT
Lena, how beautiful they are in the second photo!)))
I will definitely do it for a child!
Did you do it in standard cupcake forms or as for candy?
Elena Bo
In the absence of anything more suitable, I did it in ordinary silicone cupcake tins.
ksuxa198721
But I didn’t succeed. For some reason, chocolate all stacks along the walls of the silicone molds to the bottom. But the curd mass itself is very tasty.
Elena Bo
Either bad chocolate, or overheated. The chocolate should only be softened in the microwave, but not brought to a boil.
LLika
I think such a silicone mold is suitable for glazed curds Homemade glazed cheeses
I will add it to my "catalog" of purchases
Elena, thanks for the recipe
Elena Bo
Yes, the mold is right for cheese.
nimart
Elena, thanks a lot for the recipe !!!
The children ate it, although it was made with flaws

The cottage cheese was homemade and did not add butter. and it helps to keep the shape?
Melt a bar of white chocolate in a milk cooker
I added jam to the curd, but it was better without
the tile was stretched into 5 molds, translucent, but after the freezer the shape was kept
How should you make a "chocolate lid" so that it is smooth and wrinkle-free?
I will definitely do more !!!!
Alenka83
Elena Bo I have long wanted to make cheese curds at home, because the purchased ones are pure chemistry. I dragged the recipe into my notebook!

The oil does not help to keep the shape, but it gives a delicate taste. It turns out to be a sweet curd mass, if not poured with chocolate.
So that the lid is smooth, you need to fill it with warm chocolate. If very thick, mix with a lump of warm butter.

slike, wonderful cheese. Enjoy your meal!
Altusya
It turned out one cheese The rest did not work. When I pulled it out of the freezer and squeezed it out of the mold, (also silicone), then the chocolate broke. As a result, she fed her husband, saying, at the same time, it is necessary to destroy the failed glazed curds They flew away instantly smacking their lips, and even saying, they say, but I like it
Elena Bo
Lucky husband, ate some glazed curds
Altusya
I just didn't understand why the chocolate was breaking? A thin layer or was it necessary to squeeze out of the molds not immediately, but let it stand at room temperature? Or maybe I didn't freeze them for long?
Elena Bo
I don’t know, they didn’t break. I cover the mold with two layers, but it seems to me that the chocolate is thick. You can let it stand for 5 minutes after freezing, and then remove it. Did you process the molds or were they new? Was the chocolate good? I take Babaevsky.
Vichka
Elena, thank you very much! I love cheese, but in recent years I have not bought, why I think it is clear, but everything is so simple! Thank you, thank you and thank you !!!
Altusya
Lena, my molds are already used. Maybe chocolate really. There were leftovers of grated cocoa + Babaevsky. Or maybe the molds are complex, there are many small details.
Well, nothing, let's break through.
Elena Bo
Then let it stand for a while, since complex molds. They will melt a little and fall out as needed.
notglass
Elena Bo, thanks for such a wonderful treat. Well, it turned out sooooo tasty.

notglass, what lovely curds!
Do you also have silicone molds? And how did you get your curd cakes, right after the freezer, or let them stand for a while? My chocolates broke when I pushed them out of the mold.
Lenny
Oops. And how did I miss the cheese? Not good. The boom is to improve, especially since the refrigerator has everything you need. There are even such molds.

Altusya, I have the simplest silicone molds, very thin, I only use them in the refrigerator. She took the curds out of the freezer and immediately took them out of the molds. She took the edge and turned the mold inside out, gently nudging the bottom with her finger.
Elena Bo
notglass, what delicious curds. We must also run for fresh curd and make it. Try it at the same time in complex molds.

Exactly! I also want to make tomorrow in curly molds and stuffed with lingonberry jam.
Altusya
Girls, try it. If it works out, then I might have a problem with chocolate. Or in pull-out technology.
Grypana
Today, before work, I created (well, I have to try the new muffin tins I bought yesterday) - and everything turned out great and quickly. I didn’t even expect that the cheese would turn out so tasty, wherever it’s in store! I added dried apricots and raisins to the curd. Thanks again to Elena for the recipe!
Elena Bo
Altusya, I tell you. The molds must always be shiny inside (I tried to make them in an ice mold, it is matte, I can't take it out. The chocolate sticks to it tightly). You need good chocolate too. I tried to do dairy with Alyonka - weak, in places it crumbles, although I interfered half with Babaevsky's bitter (at least somehow hedge).
The best chocolate Babaevsky bitter for these purposes.
Altusya
Lena, thank you. : rose: I have smooth molds. Apparently it's all about chocolate

Elena Bo
