Cooking method

  • Once upon a time, nomadic warriors came up with a very interesting way of cooking fish. The fish was baked under a vegetable "fur coat" in a special device - a cocktail bowl, in which the fish was both baked and smoked at the same time. To this day, this dish is used by fishermen in Kazakhstan. In the summer, you can try to portray something similar in the country. But it's not summer now, so the oven will do.
  • The fish should be large ... Fishermen take fish (usually carp) about six kg. I had a carp weighing 3200. In the oven, as expected, he would not fit, so under the threat of being shot by Kazakh fishermen, I chopped off the fish's head !!! (I then put it on the same baking sheet next to the tail)
  • Wash the fish without peeling off the scales, cut along the back along the carcass. (Oh, shooting again! The nomads ate with spoons without cutting the dish into portions. I wanted a golden crust and a separate plate for each! So I cleaned my carp from scales ... But, in order to avoid burning the skin, I pre-coated with thick sour cream and baked on a non-stick cloth) Remove the insides, gills, rinse well under running water.

  • Put the fish on a baking sheet, brush with ketchup and mayonnaise. To make a mesh, you can fill a polyethylene bag with mayonnaise and make a tiny hole.

  • Prepare vegetables, wash and peel. (The set of vegetables for a fur coat can be different - eggplants, semi-boiled potatoes, apples ... Everything is cut into circles)
  • Liquid smoke - 1 teaspoon - dilute in 2-3 tbsp. l. water, sprinkle the fish (I didn't spray it with smoke ... we don't like it)
  • Chop pepper, zucchini, onion, tomatoes into rings, chop 2-3 cloves of garlic and herbs
  • Lay on the fish in layers - peppers, zucchini, tomatoes, onions, applying a thin mayonnaise mesh.

  • Top - salt, sprinkle with black and (optional) red pepper, chopped garlic and herbs.

  • Put in an oven preheated to 190 degrees. For 1.5-2 hours. The duration depends on the size of the fish. I baked my carp for 2 hours.
  • Well, when the fish is ready, sprinkle with chopped herbs on top, pour with lemon juice, decorate with lemon slices. No garnish needed!
