Curd-coffee mousse

Ingredients

cream cheese (cottage cheese) 300 g
powdered sugar 100 g
cream 10% fat 50 ml
coffee beans 15-20 pcs
cocoa powder 0.5 tsp
cognac (rum, brandy) 2 tbsp. l.
maple sling 2 tbsp. l.
proteins from 2 eggs

Cooking method

  • 1. Warm up coffee beans in a dry frying pan, put in boiling cream, let it boil for a minute and leave to infuse under the lid until it cools completely.
  • 2. Beat cream cheese (homemade) with powdered sugar, gradually adding the creamy coffee mixture. When the mass becomes fluffy and airy, add cocoa, pour in the syrup and brandy and beat well again.
  • 3. Beat the whites with a pinch of salt and combine with the curd mixture. Refrigerate for thirty minutes to cool slightly and serve immediately. Decorate with cream if desired, pour over with syrup.
