Wheat-rye bread in a slow cooker

Ingredients

Wheat flour 200 g
Rye flour 100 g
Agram (optional) 1 tsp
Whey or kefir (or sour cream mixed with water) 200 ml
Pressed yeast 10 g
Sugar 2 tsp
Salt 1 tsp
Olive oil 10 ml
a mixture of seeds and dried carrots 2 tbsp. l. with a slide
The flour was measured with a measuring glass, and not on a scale, so it may take a little more, or a little less, depending on the humidity.

Cooking method

  • Warm the whey (or other fermented milk liquid) slightly, to about 40 degrees. Grind yeast with sugar until it turns into liquid, mix it with whey.
  • Sift flour.
  • This time, I used two kitchen units - a bread maker and a multicooker. I kneaded the dough in a bread maker, but I decided to bake in a slow cooker.
  • Therefore, we pour the liquid with yeast into the bucket of the bread machine, add butter, flour, agram, the "Fitness Mix" mixture (this is a mixture of flaxseeds, sunflower seeds, sesame seeds, oatmeal and dried carrots), salt and set the "Dough" program. I have it 1 hour 40 minutes, of which 20 minutes is kneading, then proofing, kneading the dough and proofing again.
  • This time, when kneading, I had to add 1 tablespoon with a heap of wheat flour - the bun was at first "snotty"
  • After the end of the program, take out the dough on a board dusted with flour, knead, roll it into a ball and put it in a multicooker bowl greased with vegetable oil. slightly crush so that the bun occupies the entire surface of the bottom. Lubricate the top lightly with water, sprinkle with a mixture, sprinkle with rye flour on top.
  • We close the lid of the multicooker, and leave the dough to stand for another 30 minutes, without plugging it in. After 30 minutes, without opening the lids, we turn on the "Baking" program for 60 minutes. After the signal, turn off, open the lid and let it stand for 5-7 minutes, so that the bread moves away from the walls of the pan. We take out with the help of a double boiler basket, put to cool on a wire rack or towel.

This is my first multicooker bread. The result was very pleasing - a lush crumb, a thin, tender crust (joy for my mother).

Kneading in a bread maker solely because I was too lazy to get the mixer, and I have a bread maker with a multicooker next to me.
So here kneading can be done by any available means - both by hand and by a mixer, who has something at hand. The main thing is to give the bread a good distance. If desired, agram can be omitted, and additives can be made different, or even without them. I liked that these proportions seemed to work well for baking this way. And all the components are quite simple, which are at hand even in the country.
Yes, also, for clarity - I have a Panasonic-10, with a small 2.5 liter bowl.

I totally agree with this woman. I baked a bunch of breads in a cartoon, just for the sake of sports interest, bread in a cartoon turns out great, and any: pure rye, wheat, mixed, soda, etc.

Now I will not suffer so much that I was left without an oven, since wheat-rye is so cool. Here white bread to my taste is slightly different from the oven, but this one turned out - it is the most, very tasty!

In the oven, a completely different bread comes out of the same recipe, but in the summer the “open-hearth” was quite reluctant to turn it on. All summer it baked just like that - with and without additives. And on vacation, where there was only an electric stove, the multicooker helped me a lot. There has always been fresh bread.
