Sports bread (from the book From Borodino bread to French baguette)

Ingredients

Warm water 600 ml
Salt 2 tsp
Wheat flour 500 g
Rye flour 150 g
Whole flour 150 g
Fast acting dry yeast 3/4 Art. l.
Sesame seeds 1 tbsp. l.
Poppy seeds 1 tbsp. l.
Flax seeds 1 tbsp. l.
Grains of millet (millet) 1 tbsp. l.
Sunflower seeds 1 tbsp. l.
Candied orange 40 g
Walnut 50 g

Cooking method

  • I put the ingredients in a container in the following order: warm water, sesame seeds, poppy seeds, flax and sunflower seeds (I didn't have millet, I didn't want to replace it with millet, I added an extra spoonful of sunflower seeds), I used candied orange zest as candied orange peel, chopped pieces, salt, nuts were not, I did without them. Then I added three types of flour and dry yeast. She baked on program 10 ("Bread without salt") with a light crust. Here's what happened: Sports bread (from the book From Borodino bread to French baguette)

The dish is designed for

1500 g

Time for preparing:

3 hours 47 mins

Note

The warm bread smelled like rye flour. The cooled bread was dominated by subtle orange notes, the taste and smell were balanced, the crumb was slightly moist, well-baked. All grains are soft and tender. Continuous positive emotions! I think that nuts will only decorate this bread.

And why is this beautiful bread called sports?

(I didn't have millet, I didn't want to replace it with millet,

I'm sorry but millet and there are grains millet... In the recipe, millet in brackets is not a substitute, but an explanation.

Millet is a cereal obtained from the grains of cultivated species of millet, one of the oldest cereal crops, cultivated since the III millennium BC in China and Mongolia.

I must say that millet itself is not only yellow. It can be white, red and gray. But it is precisely the yellow grains that have the best taste and nutritional qualities.

The difference between millet and millet is the same as between non-polished rice and polished rice. Millet is peeled millet. And all the vitamins are contained in them, in purifications and germs, which are destroyed during this purification. Therefore, the bread, probably, was called (I have nothing to do with the name) sports bread due to the fact that "healthy" cereals should be used.

And I thought that "Sports" - because it is very high-calorie (judging by the composition), and, therefore, something like an energy

It may very well be))))))))))) Although, if you remove the cereals, it will become both less high-calorie and less useful.
