Ingredients

fresh tomatoes 3 pcs
Bell pepper 1 PC
chilli 1 PC
green onions 0.5 bundle
cream 10% fat 400 ml
Brown sugar 30 g
turmeric 1 tsp
olive oil 1 tbsp
balsamic vinegar 0.5 h l
salt pepper taste
hot chili sauce or ground chili taste
jelly for cakes (white) 2 p
tomato 6-8 pcs

Cooking method

  • Tomato pannacotta
  • 1. Scald the tomatoes with boiling water, remove the skin, cut in half and remove the seeds.
  • Place two of the three tomatoes in a small baking dish lined with baking paper. Season with salt, pepper, sprinkle with brown sugar and put in an oven preheated to 180 degrees for 30 minutes.

  • 2. Finely chop the green onion and the remaining tomato, add very finely chopped bell peppers and chili peppers (chopped peppers should be 1/5 of the chopped onion and tomato). Season with salt, turmeric, olive oil and balsamic vinegar. Stir gently and arrange in bowls.
  • 3. Remove the tomatoes from the oven (during this time they are slightly caraelized), mashed and add chili sauce (or just finely ground dry chili) to the resulting puree.

  • 4. Boil the cream, combine with tomato puree. Add the diluted jelly according to the instructions on the package and boil everything together for a couple of minutes. Cool slightly (this jelly hardens very quickly and significantly reduces the cooking time) and spoon into bowls with salad. Put in the refrigerator to solidify. Garnish with cherry tomatoes and chives.
  • To do this, cut the onion feather into strips 2-3 cm long, cut one side finely and put in ice water. After a few seconds, the cut ends will curl up in the form of "palms". Then chop the tomato on a skewer and put a "palm" on top.

This appetizer is prepared quickly enough and not at all difficult. And it turns out fantastically delicious! Moderately spicy, light and aromatic.

In many cases, the jelly needs to be inverted. Then you need to take agar (and it comes across different and sometimes fails at the most crucial moment). So I did an experiment with this jelly.

The volume remains the same. Soak gelatin for swelling, as usual (eight grams should be enough). Boil the cream and combine with mashed potatoes. Introduce gelatin and heat until completely dissolved, without boiling.
Everything should work out - it already depends on the quality of the gelatin.
P.S. It is better to serve immediately after hardening so that the salad in the lower layer does not "drip".
