Landmine flatbread with anise on dough

Ingredients

Dough:
Serum (water) 100g.
Fresh yeast 7d.
Sugar 10g.
Wheat flour 100g.
Dough:
Opara
Wheat flour 200g.
Serum (water) 50g.
Orange water (I have peach juice) 25g.
Vegetable oil (I have sesame oil) 15g.
Anise seeds 1h l.
Salt 3d.

Cooking method

  • Prepare dough. Grind yeast with sugar, pour into a bucket of HP. There is also whey (water), flour. Switch on the batch of any program for 5 minutes. Then turn off the HP and leave the dough for 30 minutes.
  • Then pour out the remaining whey, orange water (juice), oil. Top with flour, salt. Dough mode. Add anise 5 minutes before the end of the batch.
  • After the end of the kneading (I have 20 minutes), leave the dough for 10 minutes in the HP. Then turn off the HP, take out the dough, form a ball, grease it with vegetable oil on all sides, put it in a greased container, covered with a film and leave for 1 hour. I set the dough mode in MV Brand.
  • Over time, divide the dough into 2 parts. Form the rollers with your hands, roll them out with a rolling pin, giving them an oval shape.
  • Put the blanks on a baking sheet lined with paper at a sufficient distance from one another. Use a sharp knife (blade) to make obliquely symmetrical cuts, which then carefully expand with your hands.
  • Grease the workpieces with vegetable oil, sprinkle with flour, cover with a towel and leave for 30-40 minutes to rise. Check periodically to ensure that the cuts are not swollen.
  • Bake in an oven preheated to 200C (convection 180C) for 20 minutes.
  • Cool on a wire rack.

Rita, Fougasse (fr.) - the name comes from the Latin "focus" - hearth, because bread is similar in shape to a pancake, once baked right in the oven, with coals.

And what does orange water give?
I think the scent. I had juice from peaches in my own juice (homemade). It is not felt in bread.
