Bean salad with avocado and red onion

Ingredients

Boiled beans 1 glass
Avocado 1 PC.
Red onion 1 PC.
Lemon juice 1/2 pcs.
Lemon zest 1/2 pcs. (I used candied lemons and oranges 4 pcs.)
Fresh parsley 1-2 tbsp. l. chopped
Aromatic vinegar 1 tsp
Vegetable oil taste
Salt, spices taste

Cooking method

  • Bean salad with avocado and red onion
  • Thinly cut the red onion into rings, put in a bowl, sprinkle with a pinch of salt, sprinkle with vinegar, stir and leave to marinate while the salad is preparing.
  • Cut the avocado into small cubes, sprinkle with lemon juice.
  • You can add lemon zest to the salad for taste, but I chopped finely candied lemons and oranges, which gave the salad a very pleasant taste.
  • We collect the salad:
  • In a salad bowl, mix the boiled beans, avocado, pickled onions, parsley, citrus fruits, gently mix with your hands, from bottom to top.
  • Season the salad with salt and vegetable oil.
  • We put the finished salad in portioned salad bowls and serve.
