Ingredients

White dough:
water 295 ml
wheat flour 450 ml
salt 1.5 tsp.
sugar 1.5 tbsp. l.
vegetable oil 1.5 tbsp. l.
dry yeast 1.5 tsp.
sesame 1 tbsp. l.
Dark dough:
rye sourdough 350 g
Rye flour 390 g
malt 3 tbsp. l.
sugar 2 tbsp. l.
salt 2 tsp
vegetable oil 2 tbsp. l.
water 290 ml.
sunflower seeds 1 tbsp. l.

Cooking method

  • 1. In a bucket of HP, according to your instructions, we put the ingredients for the white dough.
  • I have liquid first, then dry ingredients.
  • Dough program.
  • 2. After kneading for 30 minutes, remove the dough from the HP bucket and transfer to a bowl, put in a warm place and cover with a towel so that it does not dry out. Detune 40-50 minutes.
  • 3. Put the ingredients for the dark dough into the HP bucket.
  • Gluten Free Program.
  • 4. Kneading 15 minutes (I help with kneading with a silicone spatula). The dough is like pasta, without a bun.
  • 5. Paused HP. I rolled the white dough into a rectangle, and spread the dark dough on it with a spatula.
  • I rolled it into a roll. I sent the roll back to the HP bucket, but without the spatula. She took off the HP from a pause and the program continued on.
  • 6. 10 minutes before baking, grease with warm water and sprinkle with sesame seeds.

In my HP Elektrolux EBM 8000, the gluten-free program lasts 2 hours 59 minutes, with baking 1 hour 20 minutes.

We grow rye sourdough ourselves, as well as wheat. Take a look at the Sourdough Bread / Sourdough section - and you will learn everything in detail

But such bread can be baked with yeast alone - the whole point of bread is in two identical pieces of dough, one of which is mixed with a dye, for example cocoa, tomato paste. There are such recipes on the forum

This bread, I also baked and completely on yeast.
For the dark test I took:
Water 390 gr. (300 + 90 for brewing malt t 95 C)
Salt 2 tsp
Rye flour 250 gr.
Wheat flour 250 gr.
Gluten 30 gr. ...
Dry sourdough 5 gr. (you can use apple cider vinegar or balsamic vinegar)
Malt 10 gr.
Dry yeast 1.5 tsp.

In this bread, I wanted to achieve a combination of two tastes of sweetish - white bread, and with the sourness of black rye, therefore I did not add cocoa.
