Ingredients

Dough:
Warm water 200g.
Fresh yeast 15g.
Sugar 1h l.
Wheat flour 50g.
Dough:

Salt 1 \ 2h. l.
Raisins 70g.
Dried apricots 70g.
Brown sugar for sprinkling

Cooking method

  • Dissolve the yeast in water, add sugar, flour, mix and leave in a warm place until a frothy "cap" appears for 15-20 minutes.
  • Pour the dough into the HP bucket. All other ingredients except raisins and dried apricots are there. Dough mode. At the end of the batch add raisins and chopped dried apricots. The gingerbread man is soft, elastic, not sticky.
  • After kneading (I have 20 minutes), leave the dough in the HP for another 10 minutes. Then turn off the HP, remove the dough, knead it, form a ball (if necessary, dust the table with flour), put it in a greased container, cover it with a film and leave it to rise in a warm place for 1 hour. I set the dough mode in MV Brand.
  • Then knead the dough, divide into 12 pieces. Form a bun from each, place on a baking sheet covered with paper, cover with a towel and leave in a warm place for 30-40 minutes. I leave in the oven with the light on and a mug of boiling water.
  • Sprinkle with water and sugar before baking.
  • Bake in an oven preheated to 200C (convection at 180C) for about 30 minutes until golden brown.

I did not put any raisins or dried apricots, I added vanillin to the dough.
