Bread with cottage cheese and pumpkin seeds (oven)

Ingredients

Lobe:
Rye flour tsz 100g.
Wheat flour 110g.
Oat flakes "Hercules" 55g.
Sunflower seeds 10g.
Pumpkin seeds 50g.
Salt 12g.
Water 300g.
Dough:
Lobe
Wheat flour 200g.
Dry grained curd 50g.
Fresh yeast 10g.
Nutmeg pinch
Pumpkin seeds for sprinkling on bread (optional)

Cooking method

  • Mix all the ingredients for the lobe, cover and leave for at least 3 hours (I left it in the refrigerator overnight).
  • Grind wheat flour with yeast by hand. For the test, mix all the ingredients with a food processor at 1 speed for 10 minutes. The consistency of the dough resembles plasticine. It is for this reason that I would not advise kneading this bread in HP. For all I will not say, but mine certainly would not have coped. If necessary, you can add a small amount of water. Leave on for 30 minutes.
  • Then knead the dough again at 1 speed for 10 minutes. Take the dough out of the combine with greased hands and form a loaf. If desired, grease with water, press in pumpkin seeds (I did not).
  • Place the loaf in a greased form, cover with a towel and leave for 60-90 minutes until 2-2.5 times increase.
  • Sprinkle with water if desired before baking.
  • Preheat the oven to 250C (convection 230C), place the dish, lower the temperature to 220C (convection 200C) and bake for about an hour.
  • Lubricate with vegetable oil (optional). Cool on a wire rack.

  • The bread turned out with a dense, aromatic crumb. Cottage cheese is not felt.
