Wet chocolate muffins with chili.

Ingredients

dark chocolate 125 gr.
butter 125 gr.
protein 3
yolk 3
ground hazelnuts 175 g
fresh chili, peel with gloves and grind (half dry) 3 gr.
zest of one orange
orange liqueur 30 ml.
P. S. in the original composition of the muffins includes fresh cardamom - 25 g and white rum 40 ml

Cooking method

  • In the baking process, the cupcakes will first rise from above with a hat, and then fall slightly in the middle, the hat will be covered with cracks, do not be alarmed, this is as it should be, because they are moist and very tasty inside! The pepper in the muffins is absolutely not bitter, but in combination with zest, nuts and chocolate, it gives them an extraordinary flavor! Delicious!
  • Melt chocolate and butter in a steam bath (in the microwave)
  • Beat the whites with more than half the sugar until stable peaks.
  • Beat the yolks with the remaining sugar until thick foam and mix with the chocolate melted with butter. Add zest, chili and nuts and mix well.
  • Introduce proteins in two steps and mix by folding from bottom to top and in a circle.
  • Place paper tins in a muffin (muffin) dish and fill 2/3 full with dough.
  • Bake in preheated to 175 "C oven for 25 minutes, focus on your oven.
