Ingredients

Lobe:
Coarse flakes (wheat, oat, or mixed) 23g.
Pumpkin seeds 18g.
Flax seeds 18g.
Sunflower seeds 18g.
Salt 8d.
Water 100g.
Dough:
Lobe
Wheat flour 235g.
Rye flour tsz 130g.
Fresh yeast 10g.
Carrot (pumpkin) 90g.
Vegetable oil 6d.
Water 120g.

Cooking method

  • Mix well all the ingredients for the lobe, cover and let stand for at least 3 hours. I put it in the refrigerator overnight.
  • Grate the carrots (pumpkin) on a medium grater.
  • For the dough, sift both types of flour, mix with yeast by hand. Add the rest of the ingredients besides the oil. Knead in a combine:
  • 2 minutes - 1 speed
  • 5 minutes - 2nd speed, add oil
  • 1 minute - 2 speed.
  • Remove the dough with wet hands. It will be like plasticine in consistency. Form a ball and place in a container slightly oiled. Cover and leave in a warm place for 1 hour. I set the dough mode in MV Brand.
  • Next, knead the dough, form a loaf and put in a greased mold. Cover with a towel and leave in a warm place for 50 minutes. I put it in the oven with the light on and a mug of boiling water.
  • Sprinkle with water if desired before baking.
  • Preheat the oven to 250C (convection 230C), place the dish, lower the temperature to 220C (convection 200C) and bake for about an hour.
  • Lubricate with vegetable oil (optional). Cool on a wire rack.

The bread does not crumble, it was very high, I thought it would crawl out of the bucket, but then the roof fell off a little. The aroma is such that the apartment does not disappear from lunch to evening.since I pounded the seeds, I did not add oil at all. I decided that there was enough of it in the seeds. Thanks for the recipe. I promise you a photo tomorrow. I baked on the "Sweet bread" mode, where in my Alaska there are two short batches. There are no manual modes, there is no oven, in the airfryer I decided not to torture myself either. Pts mode is suitable.

I baked this bread in a multicooker with a slightly modified recipe.

I added wheat and rye flour, wheat flour 220 gr, the rest - rye by eye to the desired consistency of a bun, yeast. I forgot about the carrots and didn't put them in.
Kneading in a bread maker for 10 minutes. Proofing in a multicooker Panasonic 18: put the dough in a multicooker sprinkled with a pinch of coriander, turned it on for baking for 1 minute, after an hour again for baking and for 1.5 minutes. She opened the cartoon, looked, was scared that the dough would creep out (there was not much left to the top) and turned on baking for 50 minutes. I did not grease the bowl with oil, I jumped out only on the way. Further, there are two options: it was possible to bake it in the multiturned or in the oven for a crust on top. I put it right in the multicooker bowl in an unheated airfryer for 10 minutes at 160 degrees. And pulling it out of the bowl onto the wire rack for another five minutes. The bread popped out of the bowl without any previous greasing of the bowl. Considering that I don't have a battery in the kitchen at all, it was winter outside the window and it was settling at night, then the multicooker coped with a bang.
