Pate "French accent"

Pate French accent

Ingredients

chicken liver 0.5KG
chicken fillet 250 g
cream 33% fat 100 ml
chicken egg 1 PC
bulb onions 1 PC
butter 30 g
dried apples 30 g
pistachios 50 g
salt, pepper to taste
calvados (cognac, brandy) 2 tbsp

Cooking method

  • 1. Pour boiling water over the apples, coarsely chop the pistachios.
  • 2. Cut liver into small pieces, onion into small cubes. Simmer the onion in butter until transparent, add the liver, heat for a couple of minutes. Increase heat to high, add calvados to liver and flambé.
  • 3. Grind the chicken fillet in a blender. Add the fried liver (leave some whole pieces) and chop everything together. Pour in the cream, beat in an egg, season with salt, pepper and beat again until creamy.
  • 4. Line the bottom of the baking dish with baking paper. Put half of the minced meat. Arrange the remaining pieces of liver, steamed apples and pistachios, cover with the remaining minced meat.
  • 5. Place in the oven in a water bath for 1 hour. Cool in shape.

Note

The pate turns out to be the most delicate, I highly recommend it.
