Cranberry sponge cakes

Ingredients

eggs 2 pcs
sugar 70 g
flour 70 g
corn starch 30 g
butter (melted) 25 g
baking powder 0.5 h l
vanilla sugar 1 tsp
zest from a quarter of lyon
frozen cranberries 100 g
jelly for cake 1 p
cream 33% fat 150 ml
powdered sugar 1 tbsp
warm water 2 tbsp
cognac 2 tbsp
sugar 1 tbsp

Cooking method

  • 1. Separate the whites from the yolks. Beat the yolks with 2 tablespoons of warm water and sugar until creamy. Add whites, whipped into a strong foam, and gradually add flour mixed with starch, vanilla, zest and baking powder. Add oil carefully.
  • 2. Pour the dough onto a baking sheet covered with baking paper and bake for 12-15 minutes at 180 degrees.
  • 3. From the finished biscuit, cut out cakes of any shape (in this case, hearts) and saturate the top with syrup made from cognac and sugar. Put 1 teaspoon of thawed cranberries on each cake, pour a few teaspoons of jelly over the cranberries (boil according to the instructions on the package - a quarter of a bag is enough for this recipe).
  • 4. Decorate with whipped cream, almonds or pistachios.
