Buns with whole grain flour, honey and lavender (R. Bertine)

Ingredients

wheat flour 200 g
wheat flour 100 g
fresh yeast 5 g
salt 5 g
water 170 ml
honey 15 g
lavender (dry) 0.5 h l
olive oil 2 h l

Cooking method

  • 1. Rub the yeast into the flour with your hands until fine crumbs are formed. Add all remaining ingredients (except butter) and knead the dough for 5 minutes at medium speed. Add oil a minute before the end of the batch.
  • 2. Put the test to rise for 35-45 minutes. Then gently knead the dough, put it back into a ball and leave for another 30-40 minutes (until doubled).
  • 3. Put the finished dough on a flour-dusted cutting mat, form six buns and leave to proof for 30 minutes.
  • 4. Bake at 220 degrees for five minutes, then lower the temperature to 180 and bring to readiness (7-10 minutes). Brush with milk and a pinch of salt before baking.

I added 5 grams. instant yeast, and, since there was no whole grain flour, I added two tablespoons of bran to wheat wallpaper. The dough went great! I kneaded in HP, and baked in the oven.
