Frozen cherry pie

Ingredients

Wheat flour 330 g
Oil sl. 220 g
Sugar 1 tbsp. l.
Salt 3/4 tsp
The water is cold 4 tbsp. l.
Filling:
Frozen cherries, pitted 3 glasses
Water 50 ml
Sugar 100 g
Corn starch 2 tbsp. l.

Cooking method

  • Knead the dough from flour, butter, sugar, salt and water, mold a ball, cover with foil and place in the refrigerator for an hour. Meanwhile, we are preparing the filling. Bring the cherries to a boil with 50 ml of water, add sugar and starch and cook, stirring occasionally, for 5 minutes on low heat until thickened. While the filling is cooling down, take the dough out of the refrigerator and divide it in a ratio of about 3: 1. We roll out the larger part into a thin layer with a diameter of ~ 35 cm, expecting that it will be baked in a mold with a diameter of ~ 23 cm. Transfer the dough to a floured baking dish and make several punctures with a fork.

  • Roll out a smaller part of the dough and cut it into narrow strips.

  • Now we will weave a "lid" for our pie. To do this, first lay one layer of parallel stripes.

  • Now we bend every second strip up and fold it in half.
  • 🔗
  • In the middle, perpendicular to the laid strips of dough, put another one.
  • 🔗
  • We return the curled strips to their place, but now we begin to bend the odd strips from the opposite side.

  • We continue weaving, alternately bending and laying dough strips on both sides, until we cover the entire surface

  • When the "roof" is ready, cut off the excess strips, form the rim of the cake, brush the top with whipped yolk and bake for 175about 45 minutes.
