Panasonic SD-2501. Wheat bread with cheese, smoked sausage and bran "Epiphany"

Category: Yeast bread
Panasonic SD-2501. Wheat bread with cheese, smoked sausage and Epiphany bran

Ingredients

Dry yeast 1.5 tsp.
Wheat flour 475 gr.
Bran (rye) 25 gr.
Salt 2 tsp
Sugar 2 tbsp. l.
Vegetable oil 2 tbsp. l.
Raw smoked sausage, chopped 3 tbsp. l.
Hard cheese (grated) 2.5 tbsp. l.
Garlic 1 clove
Water 330 ml

Cooking method

  • The recipe is from the instructions for the HP Panasonic SD-2501, but changed a little. I did the bookmark as recommended by the instructions. Pour yeast (I used DrOetker), wheat flour (I used Divitsa), salt, sugar, vegetable oil (I used what was - “Svetlitsa”) on the bottom of the bucket of HP. The cheese was grated on a coarse grater, I used what was in the house - with the taste of baked milk, I don't think it's important. I squeezed out 1 clove of garlic through the garlic press. Finely chopped the sausage (there was "Austrian cervelat", I don't think it's important). The sausage is added to the dispenser, but can be poured out at the HP signal. I fell asleep manually after the dispenser lid was opened.
  • Bread was baked for baptism, there was Epiphany water from the Swan spring, very cold and freshly collected. So I decided to mention it in the title.
  • Changes compared to instructions: According to the recipe, there is 250 g of wheat flour + 250 g of wheat flour with bran (only 500 g). Instead of wheat flour with bran, well, there was no such flour, I just took 225 grams of wheat flour and 25 grams of rye bran. Instead of 3 tbsp. l. garlic (well, it seemed a lot, we are not doing jellied meat) took only one clove. 0.5 tbsp. l. more sausage.
  • It was baked according to program 03 for Panasonic SD-2501 (main with raisins), size L, crust color "medium" (in mode 3, you can select only light or medium color).
  • The gingerbread man turned out to be beautiful, even. When baked, the bread rose well and very high. There is a crack on one side of the roof, but it does not spoil the taste. Baked well, evenly. The taste is very interesting, unusual, even slightly divine. It will be just right for gourmets. But not for every day. In the store, you certainly can't buy this. And it's also very cool to bake according to the program "with raisins" and instead of this raisins toss in the sausage
  • Here is a larger photo with the structure of the bread.

Thank you Tatiana! The bread is really delicious
And one more thing: this is not the first bread, baked with corn flour. But it was not very successful, did not control the bun and the water flour balance. Your advice was VERY out of place, I learned a lot from you Including about notes and pieces of paper with recipes. Now for each recipe I make notes with marks. I even developed a form specially, like this

Well, your shape is super!
Agree that such records help to take into account past shortcomings, and immediately fix the subtleties for the future, it is convenient to observe bread.

Thanks, very interesting!

Yes, Katee, I try and share my best practices, maybe they will be useful to someone else. The number of leaflets with recipes is growing, and for those that I work out for myself, there is already little space for many ..
Now I work out for myself a simple 50/50 rye bread, the recipe from the instructions for the Panasonic-2501 HP is very poor in terms of the flour / water ratio ...

But I’m stubborn, it’s already turning out well ... I will publish the final recipe soon

It's just a typo, you need 330 ml of water, not the specified 430

Yes, for this model x / stove nothing has changed, unfortunately, each instruction repeats the error in the flour / liquid ratio - the liquid must be added initially 330 ml. and only then adjust the balance for yourself and the types of flour, for example, when adding rye or whole grain flour, you need a little more liquid.

But, Brads well done!!! BRAVO, SO KEEP!

I also keep a record of the recipe on a piece of paper, write down all the adjustments during the next baking of bread, why on the forum my recipes are always verified for all ingredients. And this helps and disciplines when laying down ingredients, guarantees against mistakes, including from absolutely stupid, inattentive, where we are to blame for the failures ourselves

Thanks for the support! I want to learn rye tricks

From the typos in the instructions, I also found an obvious excess of liquid (ml should be reduced by 200) in the test for Moscow Buns (only if I found out about Rye with Bran before I did it for the first time, then I determined the joint with buns empirically, when I put dough and went for a walk calmly, and when I arrived I found the dough thick for pancakes). And yet, in my opinion, there is a lot of yeast in the recipe for Zavarny: 2 tsp. dry, it turns out equal to 18 grams of fresh yeast, and if you add so much yeast, then the dough manages to rise right up to the very edge of the bucket, and when baking, of course, it goes down, I decided to stop here by 14 grams and now it turns out weird. So you have to work and work with the recipes from the instructions.

Wow typos !!! So far I have tasted cakes, wheat, rye ... German Linz baking, the bun is just super and the bread was baked gorgeous, but I didn't really like the taste, just not mine.
I want to firmly master rye, with a high content of rye flour, and simple recipe, no additives ... For every day. While I switched to fresh natural yeast, it turns out, sometimes I make dough.

It's not difficult - bread is made from 100% rye flour. It's here:

Are you referring to the Bran Bread (Rye) recipe? I tried to bake it twice, the crust turned out to be beautiful, but inside it was sticky like plasticine. I was upset, my son really loves dark bread. I tried for him. :

And why we are constantly repeating: check the recipe, check the quantity in the dough, check the consistency of the dough, the flour / liquid balance, and so on ...

Tatyana, thank you for taking the time to answer my questions. I studied your link, only the "guide to the formation of a wheat kolobok" could not be opened gives an error. I don't really understand yet what "flour / liquid balance" means. I do everything strictly according to recipes for x \ n, I do not dare to experiment yet. Probably, I didn't get rye just because of a typo (excess water). I'm just doing a test for YOU. The bread maker is purchased to fill in the gaps if possible. I want tasty bread.
Admin

But you just don't need to do everything according to the recipe!

How to do it, look at this topic and especially the links on it Bread again did not work, I did everything strictly according to the recipe. What can be wrong? https://Mcooker-enn.tomathouse.com/index.php@option=com_smf&topic=146942.0 and pay attention to the Bread Baking Guide, you will find everything there, including about the kolobok (it’s the flour / liquid balance)

Thank you very much for the recipe! This is our second bread. The only drawback is that the top crust has failed. I remember that somewhere on the forum I saw about it, but now I was trying to find it - in no way :-) But otherwise - the bread turned out to be very tasty !!!

Oh, there should be no failures! First of all, control the flour / water balance (bun) at the kneading stage.

I did everything according to the recipe (albeit without the bran), the dough seemed thin, but did not have time to pour flour, as a result, it was not baked, flour and yeast did not rise at the bottom. help from what it is?

The dough should not be liquid ... Control the bun at the kneading stage. If thin, add flour. It is possible in the second batch, but it is short in time in HP. Check the yeast, it can be old or poor quality, it can be used by others. In this recipe you can slightly reduce the water ml. at 30-40.

I made it according to the recipe from the instructions for the bread maker, but with the replacement of 25 g of flour for the same amount of bran, as the author of the topic advised, thank you very much! The result is a wonderful lush, aromatic bread. The crust has not fallen off, it is perfectly baked. The whole family got a lot of pleasure. Thanks again for the recipe.

So I became the owner of the miracle stove. Thank you very much for the recipe, the bread turned out to be with excellent taste. The truth made some changes: instead of bran - seeds, sausages and more cheese, garlic was felt only during the baking process, a small amount of flour was added as the "bun" was kneaded. True, due to lack of experience, equalizing the temperature twice (my jamb) Taste and aroma - you can't pull by the ears !!! The family is delighted !!! This is my second bread, the first recipe in the instructions "bread with raisins" is also excellent! Panasonic SD-ZB2502 is happy with the miracle stove

VERY grateful for the recipe !!! One of the favorite bread! I do everything according to the author's recipe, the only sausage I add is boiled and more (the family liked it more with boiled sausage), and it always turns out an excellent loaf! Thank you again! And I am grateful! The bread is delicious and aromatic. The crumb, as I like, is soft and a little rubbery, almost does not crumble. The roof blew up a little, but the main thing is that it did not fail))))
