Roll with walnuts

Ingredients

Dough:
Fresh yeast (dry) 10g. (1h. L.)
Warm water 100g.
Sugar 5d.
Wheat flour 30g.
Dough:
Opara
Wheat flour 330g.
Sugar 50g.
Warm water 100g.
Softened butter 60g.
Salt 1 \ 2h. l.
Walnuts 150g.
Pitted prunes 75g.
For lubrication:
Egg 1 PC.

Cooking method

  • Prepare dough. Dissolve sugar, yeast in water, add flour. Stir and place in a warm place for 15-20 minutes until a foaming "cap" appears.
  • At this time, grind the walnuts in a blender. Do not grind in a coffee grinder so that the nuts do not become excessively oily.
  • Cut the prunes. If it is hard, then soak it in boiling water and then dry it.
  • Pour the dough and the remaining water into the HP bucket. Add butter, flour, sugar, salt. Dough mode. The gingerbread man will be smooth, not sticking to the walls. After 10 minutes of kneading, add walnuts and prunes.
  • After the end of kneading, leave the dough in the HP for 10 minutes.
  • Then take out the dough, put it on the table, lightly sprinkled with flour. Give the dough the shape of a flat circle, 1.5-2 cm thick:
  • Roll with walnuts
  • Transfer to a baking sheet lined with paper. Cover with a towel and leave in a warm place for 1 hour. I put it in the oven with the light on and a mug of boiling water.
  • Brush with egg before baking.
  • Bake in an oven preheated to 180C for 45 minutes until golden brown.
  • Cool on a wire rack.
  • Roll with walnuts
  • Very delicate crumb with a nutty taste !!!! With milk mmmmm !!!!! The original recipe suggests exactly this kind of molding, but I think that buns will be good too !!!

this amount of nuts is overpowered by HP. .. just the same bread will not work .. it will turn out different ... the smell and taste of the bread from the oven and the HP is different .... lately I began to soak nuts and seeds before baking for the night ... they are so tender! and if you bake white bread with nuts, then the color of the crumb turns out to be bluish-pinkish ... well, the aroma and aftertaste is so nutty!
