Nut pie with figs and dried persimmon

Ingredients

flour 200 g
walnuts 50 g
almond 50 g
butter 170 g
sugar 200 g
eggs 3 pcs
figs 6-8 pcs
persimmon 3 pcs
vanilla 1 p
baking powder 1.5 h l
zest and juice of half a lemon
for meringue:
proteins 2 pcs
sugar 100 g
rum 50 ml

Cooking method

  • Nut pie with figs and dried persimmon
  • 1. Pour boiling water over dried fruits, allow to soften, squeeze and cut into small pieces.
  • 2. Grind nuts very, very finely and mix with flour and baking powder.
  • 3. Beat the softened butter with sugar, vanilla, zest and lemon juice. Without stopping whisking, add eggs one at a time.
  • 4. Introduce the nut-flour mixture in several stages and add dried fruits. Put in a mold and bake at 180 degrees until tender - about forty minutes. 5-7 minutes before the end of baking, put the meringue on the cake and let it brown.
  • 5. Meringue: from rum and sugar, boil the syrup to 112 degrees and gradually pour into the whipped egg whites. Without stopping whipping, temper to room temperature.

The pie turns out to be tender, with a rich nutty taste. Figs and persimmons give the cake an oriental accent.
