Corn / oat / wheat bread (x / p Panasonic SD-2501)

Corn / oat / wheat bread (x / p Panasonic SD-2501)

Ingredients

Dry yeast 1.5 tsp.
Wheat flour 250 g
Corn flour 110 g
Oat flakes 7 tbsp. l.
Salt 2 tsp
Sugar 2 tbsp. l.
Powdered milk 2 tbsp. l.
Margarine 2 tbsp. l. (30 g.)
Water 270 ml

Cooking method

  • I decided to experiment with cornbread.
  • The recipe "Bread from several types of flour" is taken as a basis from the instructions for the Panasonic SD-2501. But I wanted a little more corn flavor and shade in the bread. Therefore, from the standard recipe, I reduced the amount of wheat flour by 50 g, respectively increasing the amount of corn flour by 50 g. And at 1 tbsp. l. more oatmeal than the standard recipe. The ingredients were weighed on an electronic balance (accurate to 1 g). I used margarine instead of butter.
  • The bread turned out to be not as fluffy as according to the standard Panasonic SD-2501 recipe, but very tasty and with a pronounced corn flavor. I liked the taste more than in the standard recipe. Perhaps a little more water was needed to make it more lush, 30 grams, but not sure.
  • Baked according to program 01 with medium crust.
  • Corn / oat / wheat bread (x / p Panasonic SD-2501)

I also love the original recipe cornbread.
Yes, more liquid was needed - once they increased the amount of corn flour and flakes (after all, they take more liquid than wheat flour). He would have risen better. And the load on the motor would be less. And it looks yellow!

How tough you have turned out! He lacks liquid and a lot !!!

We are going to get acquainted with the concept of flour / liquid balance:

Thank you for your valuable advice and kind attitude!
I will continue to learn the intricacies of baking bread, and of course, experiments - I really love to experiment.

Having read about this bread on the forum, I decided to bake it for the first time. I took the recipe for HP Panasonic 2502 as a basis, but instead of oatmeal flakes I put oat flour (the flakes ran out). Size M, crust-Medium, mode-Basic.
Wheat flour - 225g (but in the process of kneading I added 2 tbsp. L, because the dough turned out to be liquid and the bun did not form)
Corn flour - 40g
Oat flour - 40g
Salt - 1.5 tsp
Sugar - 1.5 tbsp. l
Powdered milk - 1.5 tbsp. l
Butter - 1.5 tbsp. l (24g)
Water - 220 ml
Dry yeast - 1.25 tsp
I controlled the kneading, the dough was liquid, so I had to add wheat flour after the first kneading of 1 tbsp. l spoon and after the second kneading 1 st. l. I thought about adding corn, but I was afraid. The gingerbread man turned out, but watery in my opinion, but the main rise has already begun. Despite all my fears, the bread rose well, baked well, it turned out to be very airy, moderately porous, with a delicate crust on all sides, yellowish (but not as yellow as that of the author 2501. And most importantly, very tasty!

Having read about this bread on the forum, I decided to bake it for the first time. Based on the recipe for HP Panasonic 2502 ...
Natalia, don't be afraid to experiment! The criterion of truth is practice ... I also bake recently ... In this recipe I did not have enough water, but the bread itself was delicious ... now I visually control the bun until it turns out to the machine ... I already got rye-wheat with a ratio of 75% rye flour, stocked up with oatmeal, corn, buckwheat, pea flour ...
I will share the recipes. I record and photograph everything.
Now I will bake Linz rye-wheat bread with a 50/50 ratio of rye and wheat flour, I took the recipe on the forum here.
Happy bread

Brads I am also an experimenter, and if you bake, please share the recipes. And I couldn't insert the photo, although I followed the link from the forum. I did something wrong until I figured it out. And yesterday I baked a cupcake from a book, it turned out very tasty, but I suffered with the baking time.

There are a lot of recipes on the forum for various types of bread. For different tastes.
I'm still looking for something that interests me and that I like in taste and composition.
With wheat, more or less figured out and tested, even had some fun, here is the link to the experiment

Now I deal with rye, it's much more difficult

The oatmeal was ordinary, not quick, so I poured it over and boiled it in the microwave for several minutes. Corn and wheat flour and flakes took as much as stated in the basic recipe; the bread is not bad. Thank you.
