Snowflake cake

Ingredients

Sponge cake (cakes) 3 pcs.
Raspberry 500 g
Impregnation
Water ½ cup
Sugar 3 tsp
Cognac 1 tbsp. l.
Cream
Cream 35% 500 ml
Sugar 4 tbsp. l.
Vanilla sugar 2 sachets
Glaze
Powdered sugar 12 Art. l.
¾ lemon juice

Cooking method

  • We bake a light biscuit - whatever you like best ("your favorite"). The main thing is that the volume of the biscuit allows it to be then cut into 3 cakes.
  • Raspberries can be used both fresh and frozen, after defrosting them.
  • We are preparing the impregnation. Dissolve sugar in water, add brandy. Let cool completely (if the water was warm). We saturate all three cakes. I do it with a brush.
  • Whisk in cream with sugar and vanilla sugar. Leave a small amount of whipped cream for decoration, halve the rest.
  • Put half of the cream on the first crust, level the surface. Put half the raspberries on top, spreading them over the entire surface. Cover with the second cake and repeat the same thing - first cream, then raspberries. Cover with the third cake.
  • Cooking the icing. Add about 7 teaspoons of lemon juice to the icing sugar. We stir everything. Then very carefully (almost drop by drop) add lemon juice, stir and constantly monitor the consistency of the glaze - it should be fluid, but not liquid and crystallize quickly. Fill the top of the third cake with icing, quickly and accurately level it with a knife (the soaked cake is very tender).
  • Decorate the top with cream, optionally with raspberries. We put it in the fridge so that the cake is "infused".
  • Snowflake cake

Difficult choice ... Strawberries, in my opinion, are slightly bland for such a cake, but kiwi ... only a little more sugar will have to be added to the cream.

Thank you! The cake is really refreshing. Blueberries? .. maybe, but then I would add lemon juice to the whipped cream, otherwise it will be very sweet.

I often make a similar cake, and also mainly in winter, when I want something tasty and summer, only with frozen cranberries and lingonberries, I boil the berry a little with sugar, since it is more sour, but I didn't know with raspberries now and I will do with raspberries
