Sesame cake

Ingredients

Wheat flour 300g.
Fresh / dry yeast 11g. \ 3.5g.
Water 100g.
Milk 90g.
Sesame oil 30g.
Salt 2h l.
Sugar 2h l.
Black sesame 1 st. L. (15g.) + 1h. l. for sprinkling

Cooking method

  • Grind yeast with sugar and leave for 10 minutes (mix dry yeast with flour). Pour HP into the bucket. There is also milk, water. Top with flour, sesame seeds. Dough mode. Add salt and oil 10 minutes after starting mixing. Knead a smooth elastic dough. My kneading lasts only 20 minutes, and in the last 10 minutes the butter did not have time to interfere with the dough, so I turned on the kneading for an additional 10 minutes. You can leave in the HP for the ascent for 1.5 hours. I tested the dough mode in MV Brand for 1 hour.
  • Slightly knead the dough that has come, without kneading, transfer to a baking sheet covered with paper and stretch it into a cake with your hands. Cover with a towel and leave for 30 minutes.
  • Sprinkle with water before baking, sprinkle with sesame seeds, sprinkle with water again.
  • Bake in an oven preheated to 200C for 15-20 minutes until browning.
  • Judge the finished cake on the wire rack. Brush with sesame oil if desired.
  • Sesame cake
  • Very fragrant, delicate crumb with a nutty flavor under a crispy crust !!!!!! : nyam: You can make not one big, but several small cakes.
  • Based on recipe 🔗

Ikra
Omela , your baked goods are as good as ever.
But I came here with the word "cakes". I really need it, I think you are the only one who can help me.
In general, this: I had a culture shock here during the holidays. We went to visit a friend's dacha, and his tandoor started up. Real, brought from Uzbekistan. And his house helper, a Termez Uzbek woman, made him for us, there are flat cakes in it - unleavened, without yeast, but flaky. They melt in my mouth, I have not been allowed to sleep for several days. I saw how she rolled them and made them flaky: I rolled the dough thinly into a "piece of paper", greased it with melted butter, rolled it first into a roll, then a roll with a snail, and kneaded the snail into a cake with a fist. But how the dough itself did, I did not find. But they failed to find out the recipe: she doesn't speak Russian very well, and ... "The East is a delicate matter! ... Flour, water, salt, mesi here and there" ...
I already bought a clay tray for flowers, and burned it in the oven. And "back and forth" I kneaded as I could ... But the cakes turned out dry, although they layered decently. How would you learn such a recipe and try it with your skillful hands? Do you smell the dough, maybe it will work out?

Ikra , Nuuu straight embarrassed skillful hands! I also ate such cakes, the Uzbek treated them. I liked it too - it's impossible to tear yourself away, BUT only fresh and hot. The next day already - beeeeee. But I didn’t have enough control then to ask her for a recipe. We will assume that I tied a knot for memory, I will keep in mind and try to try to dig up a thread!

Caviar, and the tandoor can be ordered here: 🔗
Ikra
I have nowhere to put the tandoor yet. But, I think, on a stone or on a ceramic tray in the oven it should look similar.
However, the next day I didn't have a chance to try the cakes - they diminished the whole portion in five minutes under the Seliger fish soup
Alexandra
Girls, I'm sorry to interfere

I once made similar scones based on a recipe from Ayn

Look, maybe it will come in handy?

Omela
Yulia, welcome to the forum! You have made a beautiful cake. Baked in the form?
Lemira
Thank you! I can and should be on you) I baked the baking like a lazy sloth in HP, sent it to the multicooker for proofing, and baked it there. Since I was substituted, I still bake tomato and basil bread. Basil is so ugly, it's straightforward to add it everywhere)
