Pampushki with garlic (for borsch)

Ingredients

flour 330 g
milk 170 ml
fresh yeast 5 g
sugar 1 tsp
butter 15 g
olive oil 15 g
salt 0.5 h l
garlic 3-4 cloves
olive oil 1-2 h l
salt on the tip of a knife
ground chili on the tip of a knife

Cooking method

  • 1. Grind yeast with sugar and leave for 10 minutes.
  • 2. Combine all ingredients and knead the dough for 5 minutes at minimum speed. Let stand for 5 minutes and continue kneading for 10 minutes at medium speed. The dough should be smooth and elastic.
  • 3. Let the dough sit for 15 minutes and divide into pieces weighing 35-40 g. Let sit for another five minutes, then roll up and round. Lay out at a distance of 1 cm from each other in 2-3 rows. Leave to rise until doubled (about an hour) at a temperature of 30 degrees.
  • Brush with an egg and bake at 220 degrees until golden brown (12-15 minutes).
  • 4. Pass the garlic through a press, add oil, salt, chili and grind well. Grease the finished donuts (immediately from the oven) with the garlic mixture.

The recipe is like everyone else's - most of the fragrant sunflower oil with the smell of seeds, dried herbs are required, salt and a lot of crushed garlic, very little water, chop a little chili pepper. On donuts, before sending for baking, cut crosswise with a blade. Smear hot freshly baked donuts very abundantly (fill) with filling. Let stand on the table for 20-25 minutes. And then for another 5-10 minutes in a preheated oven at a temperature of 180-200 degrees, bake the crust. Pampushki will not only be fragrant, but the crust will be oily and crispy. Once it happened so accidentally for me - I made more fillings than necessary. And it was a pity to pour out. So I poured it all out. It turns out just amazing.
