Ingredients

Orange-Lemon Kurd:
Starch 1 tbsp. l.
One lemon juice
Orange juice up to total with lemon juice = 1 glass
Orange zest 1 tsp
Butter 30 g
Sugar 3/4 cup
Eggs (large) 3 pcs.
Biscuit:
Milk 50 ml
Vanilla 1 g
Butter 30 g
Flour 55 g
Good quality cocoa 20 g
Baking powder 1 tsp
Sugar 150 g
Eggs (large) 3 pcs.
Yolk 3 pcs.
Mousse:
Cut the white chocolate into pieces 250 g
Cream 35% 300 g
Protein 2 pcs.
Gelatin (preferably in plates) 8 g
Liqueur from Kumkovat (orange liqueur) or orange juice 3 tbsp. l.
Water 2 tbsp. l.

Cooking method

  • A very delicate cake from Alice Medrich with an orange aroma and sourness, with an amazing airy mousse, will bring a unique taste pleasure to you and your loved ones, try it!
  • 1. Orange-Lemon Kurd:
  • Mix eggs, juice, sugar and starch in a saucepan with a thick bottom, cook over very low heat until the cream thickens and begins to gurgle.
  • add zest and butter (30 gr.), mix well and cool completely, covered with a film so that a crust does not form.
  • Biscuit:
  • 2. Place milk, butter and vanilla in a saucepan, heat over low heat until the butter dissolves, but do not boil, keep hot until use.
  • 3. Sift flour, cocoa and baking powder twice, return to the sieve, set aside.
  • 4. In a bowl, whisk the eggs, yolks and sugar until smooth. Heat the egg mixture in a water bath, stirring occasionally, until warm. Remove from the water bath, whisk immediately with a mixer until the mixture cools down, increases in size by 3 times and resembles thick whipped cream in consistency.
  • 5. Sift 1/3 of the flour onto the egg mass and mix gently with a spatula. Then add the remaining flour in 2 steps in the same way.
  • 6. Add 2-3 tbsp. l. Stir the dough into hot milk well, and then mix with the main dough.
  • distribute the dough on a baking sheet covered with baking paper. Bake preheated to 190-200aboutFrom the oven 10-12 min. Cool directly on the baking sheet on which the sponge cake was baked.
  • 7. Remove the biscuit from the paper on which it was baked and transfer to a clean sheet of baking paper. Apply the Kurd, and with the help of paper, removing it in the process, roll the roll.
  • *Note: Kurd is better to apply it not all at once, but as it curls, because the biscuit is very delicate and bursts. next time I'll do just that!
  • 8. Pack the roll tightly in paper, twist the sides like candy and put it in the freezer overnight, I didn't have time for this, and 4 hours is not enough!
  • White chocolate mousse with Kumkovat liqueur (orange liqueur):
  • 9. Soak gelatin in cold water. Beat the whites until firm and soft peaks. put in the refrigerator.
  • 10. Whisk the cream until stiff peaks.
  • 11. Melt chocolate + 2 tbsp. l. water in a steam bath or in the microwave, add squeezed and swollen gelatin, mix.
  • 12. Combine the cream with the chocolate-gelatin mixture, mix well, add the liquor and 1/3 of the proteins, mix with a spatula by folding, from bottom to top and in a circle. introduce the remaining proteins in the same way.
  • Assembly:
  • 13. Cover the mold (I have a glass salad bowl) with cling film and line it with 0.5 cm thick slices of roll.
  • 14. Fill with mousse and cover with the remaining rolls. put in the refrigerator overnight.
  • 15. Turn the frozen cake onto a platter.you can grease the top with warmed apricot or peach jam, my roll turned out to be juicy and I sprinkled the cake, leaving the islets of cream, with chocolate chips.

Also, when I started doing it, I realized that starch and oil were not indicated in the composition, but oil was indicated 2 times in the test. And there are no instructions on how to bake the dough. I did as experience suggested. Everything worked out great. The cake is very interesting, delicious!

The dough is very tasty, soft, wonderfully rolled into a roll, did not break or crack. I have already baked a round cake for Swan Lake, and I am planning to bake other cakes.

I got a thin Kurd. I had to roll the roll on cling film, and so freeze. Next time, I will either add starch to the Kurd or a little frostbite before applying to the dough.
