Ingredients

Dough:
Wheat flour 200g.
Fresh yeast 15g.
Milk (water + milk) 250g.
Dough:
Opara
Wheat flour 430g.
Eggs 3 pcs.
Sugar 60g.
Butter 60g.
Salt pinch
For lubrication:
Egg 1 PC.
For sprinkling:
Sugar taste
Cinnamon taste

Cooking method

  • Making a dough. Heat the milk to 37C, dissolve the yeast, stir in the flour, covered with foil and leave for 30 minutes in a warm place. I put it near the battery.
  • Separate the yolks and whites. Beat egg whites with salt until firm. Grind the yolks with sugar until the sugar is completely dissolved (4-5 minutes).
  • Melt the butter and cool.
  • Mix the yolks, butter, whites into the dough, pour into the HP bucket. Flour on top. Dough mode. If necessary, add flour to a soft ball. But do not overdo it !!!! It is better to leave the dough slightly sticking to your hands and dust the table when cutting. After the end of the kneading, turn off the HP, take out the dough, form a ball and put in a container (at least 5 liters), slightly oiled with vegetable oil for 1-1.5 hours. I debuted at MV Brand on the corresponding program.
  • After a lapse of time, knead the dough, divide into 3 parts.
  • Roll each part into a circle, sprinkle with sugar and cinnamon, cut into 4 parts:

  • Roll up from the wide side to the narrow side, like a bagel, pinch the edges, roll up in a crescent.

  • Place on a baking sheet lined with paper. Cover with a towel and leave for 30 minutes.
  • Brush with egg and sprinkle with cinnamon sugar before baking.
  • Bake in an oven preheated to 175C for 20-25 minutes until golden brown.

Recipe from the magazine "Ukrainian home cooking, with my changes, namely:
Reduced the number of eggs from 9 to 3. And accordingly reduced all components proportionally. But in the end, I had to add a decent amount of flour. Therefore, it turned out so much.
