The finished bread is very similar to "French". The same airy with a crispy crust. May be a little rougher due to whole flour.

Yesterday I baked and photographed this bread:

Amazing handsome man, I bake it regularly, and still try to add olives ... the main thing is not to shift too much ...

Tell Yana, is it necessary to add gluten in this case? Or it depends on the quality of the whole flour. I tried to bake, the bread did not rise, although I got flour from a local store at the bakery. Probably you need to buy an imported one in a supermarket ... I looked through all your recipes and you have wonderful high bread and you don't put penifirin. Share your secret
Yana
Ogorod, there is no need to add gluten to this bread. It turns out so tall. But I baked in French whole flour. This flour is of very good quality, hence the result.

And there is no secret. You just need to accurately measure everything on the scales and follow the recipe.

Today I made bread according to your recipe and my roof fell through. The baking mode has chosen "Whole grain" baking time 2h 45 minutes. I don't have a dietary program.

leoncia, if you contact the author of the recipe, then Yana has not appeared on the forum for a long time. Look here, you will find answers to your question.

I didn’t bake this bread, but if the roof fell, then they didn’t track the bun, and most likely there was a lot of liquid.
