Ingredients

wheat flour 450 gr. (3 measuring cups)
Rye flour 150 gr. (1 measuring cup)
dry yeast 1.5 tsp
dark beer 250 ml.
boiled water 100 ml.
instant coffee 2 tsp
vegetable oil 2.5 tsp
sugar 2 tsp
salt 2 tsp

Cooking method

  • First, pour beer into a baking container, add boiled water with dissolved sugar and coffee, add yeast and rye flour, mix by hand until smooth, let stand for 10-15 minutes. Next, we fill in the rest of the ingredients in this mass and voila! After 3.5 hours, the bread is ready. So that the roof does not fall off - do not get it after baking for 10-15 minutes. The bread has a very airy structure, rises well, has a pronounced barley taste with a barely noticeable bitterness. Can be recommended as bread for every day.

I didn't have time to make a photo of the whole loaf, the household had already tried it. The color in the photo is slightly distorted, the sun is outside, the window is closed with blinds. The color is light brown in nature. By the way, if you wish, you can add cumin, replace sugar with honey (but this complicates the recipe a little). The concept of this bread - it could not be simpler (at least I did not find it on the vastness of the worldwide network).

Well .... what makes it difficult? Throw a spoonful of honey instead of sugar? So the taste of the bread will only benefit! You already made so many unnecessary movements to knead the dough ... you could just lay everything in and get ready bread in 3.5 hours!

Thanks for the feedback. I will explain by kneading the dough - I did not throw everything at once, first mixed the rye flour with the indicated liquids and yeast, let it brew for 10-15 minutes, so that the yeast came to life, the fermentation process began, a kind of impromptu dough. This is only good for bread. I don't know if it's right or not. And regarding the simplicity of the recipe on BEER, you will not find it easier, I assure you.

Good evening. slightly changed your recipe. divided rye flour in half with buckwheat. and there was no honey. but for some reason the bread did not rise. maybe a little yeast? the first time I tried Voronezh instead of Saf-moment. Who ever baked them? how they behave. need more or the same? and so the bread is delicious. I do it a second time. Thank you

I tried to bake it, everything turned out great! Added 2h. l. cumin. I liked the preliminary batch (no salt!).
And it's easy, and it's nice ... I made the crust light, it turned out to be crispy. and tender, the bread rose very well.
