Ingredients

Cooking method

  • Immediately I emphasize that lemons for the preparation of dried candied fruits in syrup, it is better to use biologically pure, thin-crust, and new harvest in the fall.
  • Knowing this, I was waiting for the month of October-November, when Abkhazian lemons of the new harvest, so beautiful, transparent in appearance, fragrant and delicious with tea, will appear on sale!

  • Preparation:
  • Wash whole lemons well with water.
  • Pour water into a saucepan (it is advisable to take a large, but narrow and high pan) so that the lemons float freely in the water. Boil water and dip whole lemons into it, boil them for a short time, stirring and constantly checking the condition of the lemon peel - it should become soft and wrinkle under your fingers. But don't cook lemons !!! Keep the water hot for about 85-90 * С !!! This way the lemons will become soft (the crust will not thicken during drying!), And retain their bulk!
  • Remove the lemons in a colander, let the water drain, cool slightly until warm.
  • Cut the lemons into 4 parts, do not remove the seeds!
  • Do not peel the peel from lemons!
  • And do not cut the white membranes in the center of the lobules, they will help keep the shape of the lobules!
  • Make 350-400 ml water syrup. and sugar 500 grams (or to taste), boil the syrup, and put lemon slices in it, boil again, let the slices boil (warm up) over very low heat (syrup temperature 85-90 * C) for 10-15 minutes and set aside the pan with syrup aside until it cools.
  • The next day, put the pan with slices on the fire again, and repeat the procedure for heating the lemon slices, again leave the pan aside until it cools.
  • You need to carry out 2-3 such procedures for heating the slices and bring the slices to the state of transparency of the fruit, the transparency of the rind, so that the crust becomes soft (you can taste it), so that you are satisfied with the taste of the lemon itself (sweet slices, sweet and sour). In the process of heating the slices, you can add additional sugar, vanilla and other additives to taste.
  • Put the finished slices in a colander, drain the syrup.
  • Put the slices on the trays of the dryer, dry first at a high temperature, then after a few hours (when the slices are dry) set to a lower temperature.
  • The drying method with intermittent drying works well - when the slices dry overnight, and for the day you can turn off the dryer, and then continue drying.

Note

The result is such interesting candied lemon fruits - not dry and not completely wet!

My taste turned out to be sweet and sour, which suits me. There is also a citrus flavor, but there is no bitterness at all, since it was removed with hot water at the very beginning.
The crust of the lobules is very soft, chews well, tastes good.

The use of such candied fruits is very diverse: thin slicing into salads, dough, biscuits, bread, muffins!
And sometimes I like to chew!

I made a small batch, for testing, and only 5 lemons, and for control, I rolled the remaining slices in sugar - I'll see what happens ...
But, for myself, I have already decided that I will make another batch of lemon slices, already from about 1-1.5 kg. fresh lemons!
