Baked pork in a spicy pomegranate sauce

Ingredients

pork neck 1.2-1.5 kg
carrot 1-2 pcs
pomegranate (large) 1 PC
orange (large) 1 PC
dry red wine 150-200 ml
five pepper mix (freshly ground) 1 tsp
sweet paprika 1 tsp
coriander (not ground) 0.5 h l
salt 1 tbsp
cognac 30 ml
honey 1 tsp
olive oil 1 tbsp

Cooking method

  • 1. Wash the meat and dry well. Grind the pepper, lightly crush the coriander seeds. Remove the zest from the orange. Mix all the spices with salt (if you wish, you can add a little ground chili), orange zest and rub the meat with this mixture. Pour 1 tablespoon of olive oil onto a piece of meat and rub it evenly over the entire surface of the meat. Leave to marinate for a couple of hours (you can overnight).
  • 2. Cut the carrots into slices and put the bottom of the dish in which the meat will be baked. Squeeze pomegranate and orange juice, mix with wine. Put the meat on the chopped carrots, pour the mixture of juice and wine and put in the oven. Bake covered for 1.5 - 2 hours. 15-20 minutes before the end of baking, remove the lid and grease the meat with the honey-cognac mixture and periodically pour over the sauce formed during baking. Bring to readiness.

The meat is incredibly aromatic and tender. Roasting time depends on the degree of tenderness of the meat that you want to get. The meat will completely melt in the mouth if, after turning off the oven, cover it again and leave it in the oven (off) to sweat for another 30-40 minutes.

Lana, can. But only in proporation - 1-2 tablespoons. As far as I remember, the sauce from different manufacturers differs in thickness and richness of taste.
And check the amount of liquid during the baking process (you may need to add wine or just water).
