Ingredients

one lemon
one small orange
one tangerine
150ml water
250 grams of sugar
sugar for sprinkling finished slices

  • These are almost candied fruits - whole slices of any citrus fruit, boiled and aged in syrup, and then dried and sprinkled with sugar. It turns out delicious from any citrus, only it is better to take it with a dense shell of slices - Abkhaz tangerines, for example, cannot stand such bullying. But lemons and small oranges - please!
  • It happens to me: I clean the fruit, and then dried slices remain ... it is no longer tasty to eat, but this recipe is just salvation! In this recipe, I used one lemon, one small orange and one tangerine.
  • Peel the citrus fruits, slice them, and dry overnight or more. If there are bones, cut a slice from above and remove them.
  • Pour 150 ml of water into a saucepan, add 250 grams of sugar and cook for a couple of minutes. Put dried slices into the syrup and cook over low heat for 5 minutes. It is advisable to put so many fruits that they do not interfere with each other.
  • Leave in syrup for a day and cook again for 5 minutes. So I cook every day for 5 days until the syrup is almost absorbed. Remove the slices from the hot syrup and place them on the parchment to cool. You can leave it for a couple of days just in the kitchen, or you can dry it in the oven at the lowest temperature with the door ajar.
  • Dried slices should be rolled in granulated sugar.
  • Store in a closed box.

Last year I stuck each one with chocolates with zest and dried fruit (they still remember this to me), and this year I am thinking of trying such slices. I do it. I boiled the slices in syrup for the first time - the juice flowed out of the cut slices and only the skins remained, the syrup became liquid like water. I had to add more sugar, because there is no point in cooking in a syrup of such a consistency. Tangerines, I'm afraid, too, will not withstand several boils. Conclusion - you can take only whole slices, and remove the bones from the ready-made ones. I added another kumquat of 5 peeled and unpeeled, I'll see how it goes.

It's all about the consistency of the syrup. What happened after the first brew is just water. In it, the slices would simply boil down, like in compote. And you need syrup so that the slices are saturated with sugar, like in jam. I removed all the empty slices, added sugar and now just what you need. You just need to dry the slices longer before cooking. I dried mine with my bones removed for 2 days and two nights. When I started to cook, I didn't stir them up much, I shook them gently, but it seemed to me that everything was gone !!!! Some slices became slender ... But then, while resting, they took the juice back. In general, every time I cooked, dying that I have only one skin left. Well, somewhere more, somewhere less, but the "filling" was preserved, and everything turned out to be in order with taste. Here's what happened in the end:
