Rita's mom
My husband really likes the soldier's bread, but on the forum I could not find it.
Help, good people.
celfh
is the name of the bread - soldier's?
I worked in the military for many years, but I don’t remember bread with that name. And bread is delivered to shops located at military units from an ordinary civilian bakery.

This bread in stores (in Moscow, for sure) is called a soldier's, but about the military - I don't know

I have never met this. Question: is it a bakery that makes bread or a private bakery, the store itself?
After all, you can ask a question there, so that they show at least the flour-water ratio, what kind of flour, what additives - and then we ourselves will figure it out. And the ingredients are also printed on the label ... though not all of them do not give the flour / water ratio
But most likely this is ordinary bread.

I found the recipe for "Soldier's Bread" in the internet ....

🔗
Pour sifted flour, icing sugar, cocoa, vanilla sugar, cinnamon, cloves into a bowl, beat in eggs, pour in vegetable oil and knead everything thoroughly. Then add chopped or crushed almonds or walnuts and raisins. On a well-greased and floured baking sheet, spoon the dough into two tight narrow strips with an interval of at least 10 cm between them, as the dough spreads during baking. Oven over low heat in a preheated oven. Remove from the oven while still soft (do not dry out under any circumstances) and cut into strips 1 cm wide with a warm sharp knife. Cookies are stored for a long time.
Products:
140 g of 1st grade flour, 140 g of powdered sugar, 2 medium-sized eggs, 1/2 bag of vanilla sugar, 1/2 tsp. cinnamon, 1.4 tsp. pounded cloves, 1 tbsp. l. vegetable oil, 20 g of cocoa, 100 g of raisins, 100 g of almonds or walnuts.

If our soldiers in the army are fed SO, then ...

Is it a biscuit or a cupcake ...

lega, I saw this recipe. I don't think it's about him.

My husband really likes the store soldier's bread,
maybe it's just memories of youth when he served in the army?
Rita's mom
The fact of the matter is that we bought it a couple of years ago in a grain tent: now we don't see it on sale
It is not quite white, but a little grayish ...

well, then this is the brand of your bakery or small bakery
Rita's mom
The worst thing is that this tent no longer exists ... and the husband raves about him ...

as I understand you perfectly !!!
I myself have been looking for the same soldier's bread for 2 years. He's delicious! the tastiest bread I've ever eaten.
Dad used to bring it from a military unit. Then they stopped making this very bread there (

I only know that this bread was made with sourdough. and he goes to the army instead of black bread, not white.
its shape is a brick.

Is that so?
Rita's mom
To be honest, I don’t know. I was not in the army ...
And the fact that a brick is for sure!

As far as I can tell from my meager knowledge,
it can be bread made of 1 or 2 grade flour according to a fairly standard recipe, but with a long proofing, baked in a mold. Or maybe even a mixture of gray wheat flour with rye. Something like Darnitsky.

Almost a year has passed

I want to say that Darnitsky is also possible. At least I baked this recipe for Darnitsa bread. 🔗 and the bread was similar to that of a soldier's. The only thing, it seems to me, if you make it with sourdough (according to the recipe above), then HE will be the most

I will do and unsubscribe)

periff, Excuse me ... "whether we did it or not, we never found out" ...
But I also remember this bread, it was .... so, ..... so ... Airy / with us / very similar to ... probably on, custard dough. It was insanely porous. And they called him Soldier.
But this is possible and not so, because there are a lot of recipes ...
And everyone gets their own bread!
And every baker puts a piece of his soul into his bread '
And we all know, took a roll, tasted it, no taste, no smell ...
And made according to GOST. And everything seems to be respected, but in the end it turned out what happened?
This is the result of the question. You bake with your soul and the bread is super, and you get what has expired!
Sorry for the flood!
periff
You are right!
I did) and now very often I make just such bread. it tastes the most like what I was looking for
delicious gray bread!

Looking for a recipe for soldier's bread (bread maker)
Annusya
On some other forum I found the name - Soldier's bread. I found this topic on this forum. Here I found a link to a recipe for a cook's website - Darnitsky Bread by fugaska
did as written in this thread, that is, as indicated on the cook
150g rye
250g millet
300 water (well, + other ingredients)
it was embarrassing that there was a lot of water, so I stood over the bun and poured either wheat flour or rye, so as not to disturb the proportion)
(I'm smart)), I've learned a lot here on the forum, even my family already know what it is to watch a kolobok. Thank you very much for the science, just if it were not for this forum, there would be no such good breads, and I'm afraid disappointment would have quarreled me with the bread maker)
then when the batch ended in a bread maker, I still found that it was bread "Darnitsky bread from fugaska" from here https://Mcooker-enn.tomathouse.com/index.php@option=com_smf&topic=596.0.html
and there are already 325g of wheat flour and 71 pages of discussions
like this, I swirled around for the recipe and came back here)
325 flour probably will be a lot for me, I'll try next time, maybe just reduce the water a little, because in grams I don't know how much flour I added during the kneading process
There was Darnitsky Bread in the bookmarks from the fugasca, but ... it did not bake, it somehow confused that there was a lot of wheat flour) And so it comes out nevertheless speckle.
I like the taste! And I still called homemade bread as - Soldier's bread)
There is no photo, since the bread remained at home) But I ate a sandwich with it.
I liked the taste very much. Fitted well, but on the verge of water, and therefore magnificently airy.
