125 gr. butter, sugar, 350 gr. flour, 2 eggs, ground cinnamon to taste, 1 gr. ground cloves, grated zest of 1/2 lemon.

11. Homemade waffles

3 eggs

My "Curd waffles" are lumpy pancakes.
In my bins I found a reprint of the recipe for cottage cheese waffles from the instructions for the old Baltic waffle iron:

Curd waffles
egg - 3 pcs.
sugar - 3 tbsp. lies.
cottage cheese - 150 g
grated lemon zest
salt - a little
milk - 2-3 tbsp. lies.
Beat egg yolks with sugar, add cottage cheese, melted butter, zest, salt mixed with baking powder, flour and milk. Beat the egg whites and mix with the dough before baking.

In fact, the recipe turned out to be incomplete: it was not specified how much oil, lemon zest, baking powder and flour should be put into the dough. As a result, having looked at other local recipes and having available about 185 g of cottage cheese, I created something:

egg - 4 pcs.
sugar - 4 tbsp. lies.
cottage cheese - 185 g
vegetable oil - 3 tbsp. lies.
grated lemon zest 1.5 tbsp. l.
salt - 1/3 tsp.
baking powder - 1.5 tsp.
milk - 200 ml.
vanillin 5 g

P.S .:
1. I will never put lemon zest in the dough - it turns out that the taste is incomprehensible, although the smell of baking waffles was pleasant.
It is better to put the zest in the filling (Hungarian cheesecakes are made, the zest is added to the cottage cheese with sugar).
2. Whether because of the cottage cheese, or because of the milk, the waffles turned out to be rubbery and dull. In general, one edge baked better and turned out to be crispy, while the other was pale, soft and dull on the inside.
Most likely, I will not make waffles on cottage cheese anymore, I will better make the filling, and I will not add a whole portion of milk either, I will try it like this: ½ milk + ½ water.
Although later here on the site I saw a recipe for cottage cheese waffles with lemon zest and raisins and the author was delighted, though the waffles were thick - Belgian, and not thin like mine.
3. Sugar was obviously not enough for my taste, although I don't like sugary sweet ones either.
4. The waffles turned out to be some kind of speckled, and one more edge was dark, and the other light.
My waffle iron does not bake evenly, but in the recipe with water it was not as noticeable as in this recipe.
I almost forgot - when I was baking - I pressed the upper half of the mold additionally with my hand, so that the waffles were thinner and baked accordingly.
Output:
Of course, I will eat these waffles - the product will not be wasted, but I will have to smear them, at least with jam or honey, since, in my opinion, something completely uninteresting has turned out.

After lying overnight, the pale edge of the waffles dried out a bit and also became crispy. Compared to the recipe on water, they paint less when you break it. Those broke already when trying to take them off the plate, but these are more "durable" turned out.
But even today she did not experience a fabulous delight from eating them.
You need to experiment further or you may come across a 100% successful recipe.
There are already two - oat and rye waffles. And I must say, I really like "Finkrisp" rye.

Another thing - they are too thick for you - the dough was thick, not for thin waffles, that's why they held the lid to thin them, that's why they are rubber.
I advise you to start using proven recipes from this site, and only then experiment.

Recipes for thick waffles are either baking soda, baking powder, or yeast. For thin waffles, none of this is required. There are many recipes for thick waffles on the forum, there are plenty to choose from.
