Ingredients

Goose 4kg.
Salt
Filling:
Bulb onions 500g.
White bread 250g.
Apple 4 things.
Jerez (Madeira) 100g.

Goose fat 75g.
Wheat flour 4st. l.
Water (broth) 200g.
Cream 20% 200g.
Thyme (I have dried) 1h l. with a slide
Salt
Sauce:
Water 300g.
Sugar 100g.
Sour apples 800g.
Zest of one lemon

Cooking method

  • Before proceeding with the actual preparation, you must remember:
  • 1. Fresh goose can be stored in the refrigerator for 2-3 days.
  • 2. Frozen goose must be thawed in the refrigerator and, depending on the size of the bird, this can take up to 3 days.
  • 3. Once thawed, the goose cannot be frozen again.
  • So let's get started.
  • 1. Cut off excess fat and butt from a goose. Whoever loves, of course, can leave the latter, without forgetting to cut out the glands.
  • 2. To prick the skin over the entire area with a fork.
  • 3. Rub the goose itself thoroughly with salt and leave for 12-18 hours.

  • 4. Cut the bread into pieces.
  • 5. Grind into crumb with your hands. Dry. You can cook the crumb in the evening, then it will dry itself. Or put in the oven for 10 minutes.

  • 7. Saute the onion in vegetable oil. Add apples and cook over low heat until apples are slightly softened.
  • 8. Then add bread crumbs, sage, egg, sherry, mix. Season with salt to taste and stir again. The filling is ready.

  • 11. Put the goose in a large baking bag (I have Paclan XXL). Tie edges tightly. Pierce the bag in several places (at least 10 punctures, otherwise the bag may explode during preparation).
  • 12. Place the goose on a cold baking sheet with the back facing down and place in a cold oven.
  • 13. Turn on the oven at 200C. The baking time depends on the size of the goose. Different sources suggest different counting systems. On average, for a large goose (like mine) it is 2.5-3 hours, for a small one - 1.5-2 hours. I baked for 1 hour at 200C and 2 hours at 180C. The goose is ready when clear juice flows out of the leg, which is punctured in the thickest place.
  • 14. 15 minutes before the end of cooking, carefully cut the bag with scissors and pour over the sherry.
